VEGAN SPINACH AND CHEESE TRIANGLES! (Spanakopita!!) Flakey, crispy triangular filo pastry parcels bursting with a delicious filling that is just as tasty and high in protein as the non-vegan version. Just so good for entertaining and to feed to a crowd – they’ve been tried and tested on my non-vegan friends! The best thing about these puffs is that they freeze well. I froze a giant batch and have been air-frying them whenever I need a quick delicious snack.

This dish is inspired by my favourite way to eat Korean rice cakes – Tteokkochi! Crispy, chewy Korean rice cakes on a stick, covered in a sticky spicy gochujang sauce! There is so much texture and big flavours happening in this dish. If you can’t find popcorn chicken, make my version of this recipe with tofu!

Peipa Tofu (or Pipa Tofu) is a classic Chinese dish of Fried Tofu Balls. This tofu recipe is definitely one to keep in your back pocket! It’s a crowd pleaser and is one of those recipes that might even convert the fussiest of eaters and can satisfy anyone. Vegan Sweet and Sour…. Popcorn Chick’n? Yep! A twist on a Chinese classic! I used Vegan Fried Chick’n’s Popcorn Chick’n for this recipe and it turned out AMAZING. You could definitely make the sauce and use it to coat deep fried tofu or other vegan proteins too, my advice would definitely be to choose something deep fried!

These generously filled vegan spinach and ricotta pasta shells are seriously scrummy, seriously yummy and you won’t even realise it’s rich in protein and greens! Feed them to any fussy eater or unknowning omnivvore and I’m pretty sure they’re going to love it. Now you could say there’s a little labour involved in stuffing the shells but it’s really not that hard, it’s quite fun and definitely all worth it once it’s done for the big bursting satisfying bites of the filled shells.

This is be far my favourite way to eat eggplant. It’s a Chinese dish that just happens to be vegan and it’s so mouthwateringly delicious. Deep fried and coated in an umami and slightly sweet sauce with plenty of garlicky flavour… Saucy and crispy on the outside, melty and hot on the inside! So many people dislike eggplant but I’m convinced they’re just not preparing it right because this meaty vegetable is so enjoyable, especially when done right! This sticky garlic eggplant is best eaten with hot jasmine rice.
