Hi all,
I have a beautiful little K-Tip kitchen prep knife in 26C3 carbon steel. It was heat treated to RC63 which should give you really good edge retention but still retain ease of sharpening. The handle is some of the best curly Koa I've worked with. The excellent chatoyance is hard to photograph. It's super light and nimble and will make a great addition to the kitchen arsenal.
SPECS:
OAL: 11. 5"
BLADE: 6.5" long, 1.5" heel height. It has...

Hello, my friends. After some good experiences with kitchen knives and cleavers, I decided to include these models in my scale production platform as well.
Fortunately, and with great thanks to customers and friends (including those I made here), only these two pieces remained from the first batch. All the other 8 I already sold BEFORE and AT the opening of my store on Saturday, here in Curitiba.
I will be very grateful if you enjoy these models too.

My standard Petty Chef Design. This one is made in “tougher than nails” 15N20 lumber saw blade steel.
I sourced this material through Jarod Todd. He did the the heat treat on this as well. He has dialed in the treatment and shown some very good results. This steel is punching out of it’s weight class. It takes a fine edge. It is not considered a stainless steel and will readily take a patina. It will rust if not dried after use.
I ground the blade with a significant distal taper...

This is a very nice handling gyuto with a 21cm (about 8") long, full flat ground 1070 steel blade that was hand polished to a service finish and lightly etched to bring out its cool tempoer line. The octagon handle is imbuia root with a collar in jacarandá da Bahia - a combimation I have used before because it works very well.
