I had a lot of coconut milk leftover so I decided to make steel cut oatmeal with coconut milk and have some to save for the next few days for breakfast. I think it makes a delicious dessert too. I'm making a vegan, gluten-free pizza crust for my son this morning and this time, I'm recording my recipe and what steps I took. I'm not using tomato sauce for this recipe to lower the acid for easier digestion for my little guy. 1 packet of Fleischmann's RapidRise Instant Yeast Fast-Acting (this one doesn't require proofing ahead of time). This past year brought a lot of changes to our family's diet to improve a health condition. This year, I baked a vegan and gluten-free vanilla cake for my kid's birthday. I was checking out my food items in my drawers earlier today and noticed that I had a can of pumpkin puree that will expire in about 5 months, which is still 2 months before Thanksgiving Day. I needed to make use it before it is no good and goes to waste so I baked a pumpkin pie today in the middle of spring!
