A while back I had the pleasure of attending Melissa’s Produce in Vernon for a book signing/luncheon featuring cookbook author, Tess Masters. We spent the morning, visiting, snacking and listening to Tess’ presentation, which was so entertaining. This salad is a refreshing change from your traditional Greek salad. Although, we eat many lentils in our cuisine they are normally served in soups, stews, and appetizers. When we were invited to attend this vegan book signing at Melissa’s Produce I was a little apprehensive to attend. Why? I took one look at the thickness of this cookbook and felt intimidated of it’s content.  Vegan Author, Chef Jean wrote the largest and most thorough book on Vegan food I have ever seen. The other day at our food blogger’s luncheon, I had thanked food blogger Lisa Dearen (Whisk and Cleaver) for her lovely comment she made during our the last meeting.
