    Healthy Date Ball Recipe:    1 Cup of Pitted Dates: Approximately 15 Dates 1 Cup of Walnuts  1/2 Cup of Raisins  1/4 Cup of Coconut Flakes    Add all ingredients into a food processor and blend until the mixture is well combined and sticky.  Use your hands to form small balls (about 1 inch in diameter).  Place the date balls on a plate or baking sheet and refrigerate for about 30 minutes to firm up.  Enjoy!   ..read more

Right before Christmas we decided to take a family getaway to Dreams Sapphire Resort & Spa in Cancun, Mexico. This was the first time since the pandemic started that we all took a flight together. It was also Valentina’s (our 2 year-old) first flight. And just like that our little girl is two years old. We celebrated her birthday last month at home with a unicorn themed birthday party. Even though we planned something small, I still wanted it to feel extra special. We worked with an amazing group of vendors in Miami that were able to make our vision come to life. I love the trend of pop-up picnics so decided to incorporate this into the party. We used My Little Party for the picnic setup. Last week, I had the opportunity to check out the "Beyond Van Gogh" exhibit in Miami. It's an immersive exhibit that uses cutting-edge technology to bring you into the world of Van Gogh. The exhibit features projections of 300 of the artists' work including classics from The Starry Night to Sunflower.   A few weeks ago, I took a little road trip to Tampa for work. This was my first time traveling anywhere in more than 8 months since Covid.
