Today in yoga, our amazing teacher Dianne talked about the need to find contentment for ourselves on gray, rainy, cold, sleety days when you live in Chicago in February. Sometimes contentment can be something as easy as a warm dinner, so tonight I’m making Skinnytaste’s Chicken Noodle Soup. My friend Bridget shared this recipe with me and it’s so good! Her secret addition are the Chicken Soup Dumplings from Trader Joe’s. You add them at the end and they are a game changer!

I’m trying so hard to lock up my diet before the holiday indulging begins, but I love fall desserts! I tell myself I’m just making these sweet treats to share with you–but who am I kidding?! It was so much fun to host some friends for dinner on a Tuesday night. I picked some easy recipes that were easy to have ready before my guests arrived. These would work great if you will be entertaining a full house over Thanksgiving.

I love that fall gives me the excuse to make all of the pumpkin things. File this Pumpkin Dump Cake recipe away for a Halloween party of something festive for Thanksgiving. It’s delicious and super easy to make.
What You Need
1 29 oz. can pumpkin puree
1 12 fluid ounce can evaporated milk
3 large eggs
1/2 cup packed brown sugar
1/2 cup white sugar
1 teaspoon ground cinammon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 teaspoon salt
1 box spice cake mix (just use half the mix)
1/2 cup coarsely chopped pecans
1/2 cup melted butter

This week, I shared my most recent, favorite finds from Trader Joe’s and I heard from many of you that these lists are helpful when you shop there–especially some of their pre-made options that make for super-quick and delicious dinners.
I was recently sharing with my Mom that I now buy almost all of my meat and produce from Trader Joe’s. Their quality, variety, and price are hard to beat.

Today finally feels like fall and I want to reshare one of my favorite recipes, inspired by Landyn Hutchinson, Pumpkin Dream Cake. It’s so good and just makes you taste the change in seasons.
What You Need Cake
1 box Betty Crocker Spice Cake Mix / Duncan Hines makes one too
1 cup Daisy Brand sour cream
15 oz can Libby’s pumpkin
1/4 cup oil
3 eggs
Icing
1 pkg cream cheese
1/4 c. butter, softened
1 tsp. vanilla
16 oz. powdered sugar
1 tsp. cinnamon
What You Do
Heat oven to 350°
Beat ingredients with mixer until well blended.
Pour into greased cake pan of choice.

I am so looking forward to a quiet long weekend. This is the first time in years that my out-of-state siblings aren’t traveling into town, so I think it’s just going to be us–and maybe my parents–for the 4th of July.
