I love fermented vegetables and often make and eat them. I've been asked how I make my ferments and so am posting this both for in case anyone wants to start fermenting but also wondered if other members would be willing to share their tips and recipes for fermented vegetables? Many Traditional Kimchi recipes have too much sugar or juice etc so what I call Kimchi is actually a spicy version of my Sauerkraut which I have detailed below. My one jar version of Sauerkraut one kilner or... Read more ..read more

In a fit of madness I bought some Singapore noodles earlier. I wouldn't say I'm scared to eat them, more apprehensive. I used to love them. I think I might be a bit less insulin resistant than I used to be. I'll test my blood sugars before and after, but ..read more

Dr David Unwin tweeted about this today : Improving diet gives hope of cancer prevention https://twitter.com/i/web/status/1773257451472642077 The video he re-tweeted is this: https://twitter.com/i/web/status/1773126285633507786 Eat real food! It's more than merely Obesity, the ingredients of Ultra Processed Food can damage Mitochondria, as can some medications. Better to avoid/prevent the problems (like T2 Diabetes, Heart Attack, Cancer) rather than wait for diagnosis and then medically treat them ..read more

I think we have a winner. These are awesome. Feels just like eating pasta - different taste, but with a sauce, not much difference in mouth feel or satisfaction while eating, and make you feel really full afterwords. 11.3g of carb for 100g uncooked - which is actually quite a bit portion, so next time may do like 50 - 75g per person, but oh boy was it satisfying. Calorie wise, it is about the same as wheat pasta (slightly less, but not much in it) Not sure how it will affect BG - will... Read more ..read more

Diabetic friendly drinks?

Can anyone suggest diabetic friendly drinks? Not referring to alcohol ones. I'm still having issues with sore gums from surgery and pureed foods are still too rough. I have some protein powder but that is very limited. I have plant milk. I'm unable to drink regular milk nor do I like it. I'm referring to strictly LIQUIDS not things like pudding or ice cream. I don't drink or eat fruits either(not often ). Broth is gross. Are there other things ..read more

On its own - very bland. It needs a sauce, or at the very least some salt. I added Parmesan cheese and a bit of chilli oil and it was much better. The most pleasing part was the mouth feel. Very Al-dente, and perhaps somewhat rubbery, but still pleasing seeing as how i've not pasta in ages. Availablebfrom iHerb. They do a fettuccine one too ..read more

Ultra processed food

I am constantly reading about the harm of ultra processed food and as single 80 year old man often wonder has I put my ready meal in my trolley "I wonder is this ultra processed"? Like so many of these food issues why does the Government define what is meant by the term and require manufacturers to state if it is ultra processed on the Label in a standard way. Same thing with ingredients, sugars etc. We are sensible enough to have standard road signs why are you not campaigning for standard... Read more ..read more
