I love fermented vegetables and often make and eat them. I've been asked how I make my ferments and so am posting this both for in case anyone wants to start fermenting but also wondered if other members would be willing to share their tips and recipes for fermented vegetables? I think we have a winner. These are awesome. Feels just like eating pasta - different taste, but with a sauce, not much difference in mouth feel or satisfaction while eating, and make you feel really full afterwords. 11.3g of carb for 100g uncooked - which is actually quite a bit portion, so next time may do like 50 - 75g per person, but oh boy was it satisfying. Can anyone suggest diabetic friendly drinks? Not referring to alcohol ones. I'm still having issues with sore gums from surgery and pureed foods are still too rough. I have some protein powder but that is very limited. I have plant milk. I'm unable to drink regular milk nor do I like it. I'm referring to strictly LIQUIDS not things like pudding or ice cream. On its own - very bland. It needs a sauce, or at the very least some salt. I added Parmesan cheese and a bit of chilli oil and it was much better. The most pleasing part was the mouth feel. I am constantly reading about the harm of ultra processed food and as single 80 year old man often wonder has I put my ready meal in my trolley "I wonder is this ultra processed"? Like so many of these food issues why does the Government define what is meant by the term and require manufacturers to state if it is ultra processed on the Label in a standard way.
