I have to say I was excited about this cocktail, but not as pleased when I made it. I expected a little more sweetness and the club soda seemed to water it down some. Overall with a few tweeks I think if would be really good. Maybe heavy cream would also make it a little more creamy as well instead of the half and half. This quick and easy dessert you can prep ahead of time them pop in the oven while you sit, relax and visit while eating dinner. Planning ahead for summer traveling when we rent a house I don’t want to sped my vacation cooking the whole time, but I do like some home cooked meals that are easy to set it and forget it. Here’s the corn side dish I served with Monday’s fried chicken. I rushed it a little and plated it right out of the oven so it looks loose. If you let it set a little to cool some it stays really nicely together. I like the sweetness paired with a hint of spice. It was a nicely balanced dish.
