It's Wellness Wednesday. I've been working to come up with NEW, Healthy Recipes for my family. My husband and I are trying to be intentional about eating healthier. Now I have to be honest, I am typically not a salad person. But there are a few salads that I really love to make.
I have recently created a new one that I absolutely love, my Spicy Dumpling Salad. This salad was superb. There are only a few simple ingredients, but it is sooooo good!!

Fish Friday is something we have very often. Growing up in Louisiana we ate Fish on Friday every week. When we eat fried fish tartar sauce is a must have condiment. We didn’t have any bottled tartar sauce left from the last time we cooked fried fish. So I decided to make my own with the ingredients I had on hand.
I have a few versions of tartar sauce. This is my easiest one.

Most families are officially back at school. For most families this is a very busy time. Busy season can make meal planning hard for some families. Sometimes finding shortcuts makes for easy meal planning and creating meals that are still homecooked. Blue Runner has been around for years. My husband and I both grew up eating Blue Runner beans.

As a recipe creator, I am always creating new recipes. Recipe creating and cooking can be time consuming. I am always looking for shortcuts when creating recipes. I recently worked with a new company, Cass Caps

A new collaboration means a new recipe. Marukan Vinegar is "rice vinegar that plays an important role by adding bright, tangy notes, adding flavor to any dish, enhancing flavors of other ingredients as well as balancing sweet, salty, fatty and acidic components of a recipe". Oxtails is a dish we grew up eating. It's still one of the most requested dishes in our house with my family. Recently I took a day trip to Lafayette to celebrate my birthday with my grandma. We share a birthday and I couldn’t miss celebrating with her. She’s 93, WOW! What a blessing. We checked out a brand new restaurant called The Chimes. The Chimes is popping right now. A very popular restaurant serving many Louisiana classics like étouffée, fried seafood, burgers, Poboys and much more.

It’s Monday, why does it feel like the weekend flew bye? Mondays are always busy. So for dinner on Mondays, I usually prepare a quick meal. This meal took less than 30 minutes.
Air Fryer Teriyaki Chicken with chicken fried rice. Topped with pineapple pico de gallo. I made it a little fancy and I used the pineapple as bowl. This meal was a hit with the family. So yummy.

I am not much of a sandwich eater, but there is one sandwich that is my favorite and has been for a very long time, Monte Cristo. Bennigan’s Restaurant had the best Monte Cristo sandwich growing up. This is the spot that I first enjoyed a Monte Cristo. Many Many years later this is still one of my favorite sandwiches. The Bennigan’s in Louisiana where I used to live closed before we relocated to Texas.
