It’s Monday, why does it feel like the weekend flew bye? Mondays are always busy. So for dinner on Mondays, I usually prepare a quick meal. This meal took less than 30 minutes.
Air Fryer Teriyaki Chicken with chicken fried rice. Topped with pineapple pico de gallo. I made it a little fancy and I used the pineapple as bowl. This meal was a hit with the family. So yummy.

I am not much of a sandwich eater, but there is one sandwich that is my favorite and has been for a very long time, Monte Cristo. Bennigan’s Restaurant had the best Monte Cristo sandwich growing up. This is the spot that I first enjoyed a Monte Cristo. Many Many years later this is still one of my favorite sandwiches. The Bennigan’s in Louisiana where I used to live closed before we relocated to Texas.
Last week I was craving a Monte Cristo. There isn’t a Bennigan’s here in Houston, so that meant I needed to create my own if I wanted to eat it.

March Madness is here and it has been MADNESS! Omg! Nail biting games, major upsets and just good games. Whether you are watching NCAA Men or Women’s basketball March Madness has been entertaining for sure!!!
Our team, LSU Women’s basketball team is headed to the sweet 16. So we are stoked. But I have to be honest this is our team, but there are a few other teams we’re rooting for, I’m trying to keep my bracket alive!!

March Madness is officially here! ?? Did you complete your bracket? I’m done with mine. But I think there will be a lot of upsets especially on the women’s side.
Our house is ready to watch and cheering on our team!
In time for March Madness I have a new wings recipe, my Alfredo Chicken wings! I wanted to keep things light with this one. Instead of chicken Alfredo pasta just my Alfredo wings.

Buffalo Chicken salad on a bed of romaine lettuce and mixed greens, sliced buffalo chicken from Just Meats, tomatoes, bacon, shredded cheese, farm fresh eggs, elbow pasta tossed in ranch dressing and fire chili ranch dressing. The McRib sandwich from McDonald’s was a popular sandwich when I was a teenager and it still is even now. For those who may not remember this sandwich was a bbq rib sandwich with pickles and onions. People would go crazy for this sandwich. It could be because it was only for a Limited Time offer. The sandwich is available each year in November. Every time this sandwich is available people go crazy.

Today is the day, the Big LSU Tigers Women’s Basketball vs South Carolina Gamecocks. So many have been anticipating this game. Who will win? Who knows, because they are both really good teams. But what I do know is that it will be a nail-bitter. We can’t wait to watch it.

I love bbq ribs. Ribs are one of the things we grill or cook on our smoker. But typically this is done on the weekend. I was craving ribs a few days ago but I didn’t have time to cook any outside so I resorted to the oven to bake my ribs. Simple and easy way to cook fall off the bones ribs. I served the ribs with French fries, side salad and a roll.

Reynolds Foil Wrap
Chicken stock (32 fl.oz)

I love fried fish sandwiches. I made my own Homemade Tartar sauce recently for my Fried Fish sandwich. OMG! So yummy.
Homemade Tartar sauce
Ingredients:
Mayo (1 cup)
Lemon juice and zest (1/2 lemon)
Fresh dill (2 big palms full)
Capers (2 tbsp)
Sweet salad cubed Pickles (1 tbsp)
Spicy mustard (2 tsp)
Worchestire sauce (2 tsp)
Cayenne pepper (1 tsp)
Pinch of salt and pinch of black pepper
Directions:
Add the mayo to the mixing bowl or cup.
Zest of 1/2 lemon.
Squeeze the lemon into the mixture.
Add in the fresh dill.
Add in the pickles.
Add in the spicy mustard.
