So for context, I got this bottle towards the end of last year. So it’s had a whole lot of time to open up. I got sick after the holidays, and was unable to drink for a while. But before that, I had amassed a collection that needs to be reviewed. So let’s go! So one of my buddies just ordered a 2L barrel thats charred and everything to age your own bourbon. He wants to put port wine, dump it, then make an port finished infinite barrel. I suggested rum, calvados, rye, or sauterns, but he seems stuff on port. It got me thinking. What about making a higher proof version of a cheap low proof bourbon? Like say putting moonshine or everclear into the barrel to get some flavor to it, then add larceny or jack daniels, then compare it to the barrel proof versions. Is there a need for Stellum now that there is Barrell foundation? I haven't had either but from my research, Stellum was there for something consistent unlike all the Barrell batches. But now there is Barrell foundation which if i understand correctly, it will be something consistent/same as well. Is there something I'm missing?
