My attempt at being healthy.....with a sweet tooth
Healthy Kodiak Cake Muffins bake up soft, fluffy and moist! These are easy to make with Kodiak Cakes Pancake Mix
Ingredients
1 cup Kodiak Power Cakes Mix (Buttermilk)
1 Ripe Bananas (approx. 209g, mashed, the riper the banana, the sweeter the muffin)
3/4 cup Fairlife Milk (Lactose Free)
1 Large Egg
A Sprinkle Coconut Sugar, or Honey
1 teaspoon Vanilla Extract
½ cup Mini Chocolate Chips (save a couple of tablespoons for topping the batter before baking)

The other day, Eden said that she wanted to be an entrepreneur--to start her own business. I said "That's amazing! What do you want to sell?" After discussing it for a minute, we landed on making and selling kid soap. She loves to mix things -making lotions/potions/scents and mixing together things that are an absolute abomination in her room and the bathroom for the sake of experimentation. So, I'm thrilled to push that energy toward something productive. She quickly started working on her "business plan" in her journal....

I drove 15 hours across the country, by myself, with 2 children....in a pandemic.
Because I'm insane.
I decided to rent a van and drive from Columbus, Ohio to Zachary, Louisiana last week to see my parents and go home for a while. My original idea was to travel while I was still working remotely and the kids were also still doing hybrid, however, since the state decided to go back to in-person, I had to escalate my execution.
First thing is packing....I hate to forget my meds or the kids meds or go to the store 50-11 times while I'm at my destination, so its really convenient to have a workin ..read more

A national holiday! But what of my rights--To vote? To learn history? To not be lynched?
Parting gifts are usually given to someone who is leaving;
Where would I go? Can I buy my own parcel and acres in Georgia?
Juneteenth, or June Nineteenth; a familiar holiday in the South

Click-bait. It's not possible.
So, my kids (like most students) thrive in a healthy school setting--having a great teacher, nice classmates, great resources....But, after last year, I'm sure the collective mental health of school aged children took a nose-dive.
We had hoped that after the vaccine was introduced to the population, there would be some reprieve. And there was, for a while (during the summer the WORLD felt like it opened up)...until duhn duhn duhn....the Delta variant popped up.

Hint: Take Social Media Breaks, Trolls are paid to trigger you, and NEVER read the comments
No doubt, many Americans experienced the highest of high hopes after the guilty verdict of Derek Chauvin for the murder of George Floyd and consequently the lowest of lows when Ma'Kiha Bryant was shot and killed by police in Columbus, Ohio. After a tough day/week/year, I had to put my phone down before going to bed and collect my breath because the conversations and images on social media was triggering my anxiety.

I sure am. Let me tell ya'll why.....
We've been on high alert due to a global pandemic since March 9, 2020
Weren't sure if we were gonna all die soon.
Proceeded to work from home and facilitate school virtually.
Washed all my groceries profusely. With bleach. Everytime.
Racism and Black trauma.
Find inferior PPE and play Russian Roulette with my life when leaving the house.
Watching copious amounts of shows I'd never watch on Hulu, Disney +, Netflix, Instagram, etc.
Watching lots and lots of Instagram, Facebook at 3:00a.m., 3:56am, 5:42am, and 15 min before it was time to get up for work.

YouTube, Instagram, Facebook, and TikTok may be detrimental to children's development. So is everything else (unregulated). Welcome to digital capitalism.
So, in the past week, Facebook has come under fire (AGAIN) about the mental health impact of its products on kids. More Southern Comfort Food for the Win!
It was Good Friday, so I wanted some good ol' catfish to to fry for the family, however, I'm always wary of the freshness of seafood since I no longer live close to any port cities. But I've been doing well with the store I've been going to so I took a chance and bought a few catfish filets and shrimp this week. Here's a quick recipe for frying up some Lent approved food.
Ingredients
4-6 catfish fillets, about 1-2 pounds
1 cup milk or buttermilk
