We are always on the look out for new recipes that we can make a keto version of. Especially recipes which include some of our favourite ingredients.
We'll admit some recipes just can't be made keto, whilst others, well you can take the carbs out but they just don't taste good!
That's not the case with this recipe!!
This is something I'd seen and wanted to have a go at a keto version ..... and it tastes so good.
We served it with some keto bread to tear and dip into the buffalo chicken, but you could serve this almost as a cheesy casserole with a vegetable on the side.

Summer is great for Keto followers! You can BBQ to your heart's delight - so long as the weather holds out.
However ..... be careful around the supermarket/butcher ready made BBQ treats. Those chicken skewers, lamb kofta, kebabs even plain old burgers and sausages can have very sugary dressings or additions ..... not very keto friendly.
So make your own (well not the sausages ..... but look for low carb brands like Heck) and enjoy the range of options summer offers.

For this week's testing we are back with DGF - Deliciously Guilt Free.
We like DGF. They have a range of cakes, blondies, brownies, even chocolate. All keto. And every week they do a few items that are special for that week ..... so there's always lots of choice, although for some of the weekly specials you need to be onto their website sharpish, as they can sell out quickly.

If you have read our Testing Tuesdays blog this week you will know that we promised the recipe to make Strawberry Compote.
So here it is. This recipe makes a really versatile compote - think stewed strawberries or unset jam - which can be used in so many ways. We have used it...
with or as a filling in sponge cake (see photo)
mixed into yoghurt (but watch the carbs from the yoghurt!)
as a topping on strawberry fluff (see photo - the recipe is in our cookbook)
on chaffles (keto waffles) with whipped cream
etc.

(Apologies for the lack of new blogs ....... we've been a bit busy, but we're back)
We like a slice of cake! Either on it's own, with a coffee or as a dessert.
So when Lo-Dough sent us one of their vanilla sponge mixes we were excited to try this out.
We have bought keto cakes online before, pre-made, and these tend to be individual brownies or blondies, so it was interesting to see how a full sized sponge cake would work.
Making it was easy. Add the correct amount of water to the cake mix, blend well until it is smooth and light, then place in a tin and cook in the oven.

We don't have these all the time....we keep them as a treat. We stay away from them at times when we might be tempted off keto, as these are lovely and a little bit sweet...which might be too tempting at times.
This recipe makes 10 cookies (I can't remember where we found the basis for the recipe - but we have amended it quite a bit to our taste) and each cookie is around 1g carbs

When you start keto, and indeed at any point when you are following a keto lifestyle, you will struggle to find out the carb count for certain products.
It's important.
If you are on a low carb diet of [say] no more than 20g a day, you'd be surprised just how easy it is to break through this limit without really knowing about it.
Indeed, when I read forums on social media, there are always people asking how to count carbs and net carbs.
It's not easy
For UK labels you would deduct polyols from the carb number (but not always on a 1 for 1 basis, depending on the type of sweetener used).

Can sausages really be that different to each other?
Short answer .... oh yes!
This is another 'mainstream' review - an item that's not designed to be Keto.....it just is.
I have hunted high and low for a decent, low carb sausage. It's the 'bits' they add (most of which you don't want top know about) that bump up the carbs - so clearly a more premium brand with a higher meat content was going to be the answer.
This sausage from Marks and Spencer wins on 3 counts
it tastes fantastic
it is the lowest carb sausage I've had at 0.3g per 100g, which is 0.4g per sausage

Sometimes you just need a snack.... and the lower the carbs the better, especially if the snack wasn't part of your meal plan for the day!
We often turn to sliced meat, cheese and the like, but this can get a bit boring. That's why we like the pork crackling options from Robert's Dorset.
There's a range of flavours from salted to extreme Naga chilli, that literally had me in tears! 11 flavours in total so there's likely to be something you like.

Ok, so I realise I’m out of order on my initial list, but… My top tip number 6 is to remind you that you still have to live…and enjoy life! Just recently Jonathan and I celebrated our 25th (or silver) wedding anniversary. On the actual date we enjoyed a wonderful keto meal of fillet steak and accompaniments which was fabulous and I have every admiration for those keto enthusiasts who never come off keto and work out how to do every celebration meal without the carbs.
