When you order wine from the other side of the country (in my most recent experience, via temperature-controlled ground transportation courier to a local UPS, then UPS to my door) how long do you wait to pull a cork to avoid bottle shock? And does it vary by wine type and age? I tend to think young, fruit forward, sturdy wines, travel better than older, delicate, more nuanced wines, but I could be wrong. My nephew is helping with his grandfather's estate, and came across this bottle, which he plans to drink. I was able to give him some general advice on preparing and serving older wines, and limiting expectations (1960 was not a good year for Burgundy; storage may be an issue) but nothing more specific to this wine. There is a wonderful restaurant group headquartered in Baltimore, called "The Atlas Group." They own/manage restaurants here, in Boca Raton, in Houston, and in a few other places. The restaurants are very good and very well run. Anyway, they are opening a new restaurant in Baltimore on Monday, March 4. It will be called “The Ruxton.” An upscale steakhouse downtown. Ok guys. My palate has gone so far away from certain styles of wine that upon reflection, it occurs to me I have not consumed a single Napa Cabernet in several years — certainly before COVID — and I have zero in my relatively small cellar. (I have had and also have Santa Cruz Mountains Cabs, however.) I don’t want to “break the bank” but I do want a genuine shot at knowing if this is something I should continue to avoid. And for those in the medical community, I do NOT mean Tuberculosis… I’m talking about how many bottles/type of wines from your personal cellar are opened in a given time period. Weekly, monthly, quarterly, annually, etc. Certainly, management tools like CellarTracker (or other means) are necessary to refine rather specific data.
