This recipe is my favorite gluten-free pancake recipe by far and my favorite way to eat buckwheat. Azure Standard sells hulled buckwheat groats. The hulled buckwheat does not have as bitter of flavor that regular buckwheat has. Buckwheat is a seed from the knotweed, sorrel, and rhubarb family that is gluten-free. It has the minerals magnesium, iron, potassium, and phosphorus as well as having the amino acid Lysine which is often lacking in plant foods (1). Their are two types of buckwheat flour that you could use for this recipe, although I find that I prefer one over the other. The first type of flour is made from whole buckwheat it includes the hull.
