Hi gang, I made my first sour beer with the "Lallemand Wildbrew Philly Sour yeast" Razzmatazz Raspberry Sour (diybeer.com). After waiting over 3 weeks and checking  FG reading, something doesn't add up. The Hydrometer had a reading of 3010.  I didn't take a SG reading unfortunately.  Any suggestions would be greatly appreciated thanks ..read more

Pressure ferment, cold crash and fining
DIY Brewing Blether Forum

Here is one for you. Not sure which of the existing topics it would fit.  I am going to cold crash the Munich Helles in the pressure fermenter in a few days and it occurred to me that I have a slight problem here. I normally add finings on day 2 of the cold crash but because it is a pressure fermenter, I cannot get them in without opening the FV. Stirring is also a potential issue as the FermZilla has a fairly small opening and I'd have to lift the whole assembly out of the fridge, then open it, add finings, TRY to stir them in gently, close the FV again, purge it and re-gas it. That is a ..read more

Electricity outtage/temperature drop mid-late ferment

I just got notice of an electricity outtage related to works scheduled for next week. Does anyone have any opinions or experience of the effects of a change in temperature during the mid to late stages of a ferment? The yeast I am planning to ferment with is US-O5. I am brewing in a fermenting fridge so I expect any change in temperature would be very slow and gradual. I believe that the greatest risk from temperature changes is in the early stages of fermentation. The scheduled works/outtage would happen on day 5 or 6. Should I forge ahead or should I wait until after ..read more

Yeast not activating?

Hey all. Bottled my first batch yesterday. The Cooper Lager that came with the kit. Was at 1005 for 3 days. Going to wait 2 weeks then try a bottle. Then another bottle a week or so till it hopefully tastes like good beer. I immediately threw another batch in the fermenter. After thoroughly cleaning everything of course! Canadian Blonde with Brew Enhancer 2. I miscalculated this time though. I used tap water for the first batch and went and got distilled water this time. Didn't take into account that the bottled distilled water wasn't as cold as my tap water so after the enhancer and can wer ..read more

Cold Crashing

Hello all, Once fermentation is complete I usually keg my beer straight away, purge it with some c02 then wait at room temp until I have space in the kegerator to carbonate.   I am interested in cold crashing brews to see the difference. As I have limited space in my kegerator, I was wondering if I can cold crash my beer for 2 days in the kegerator then remove it and leave it at room temp for a couple of weeks before it’s its turn in the fridge to carbonate and drink ..read more

Temp swings in fermenter
DIY Brewing Blether Forum

Hi all new here. Just started my first ever brew on Monday. Using the Coopers 23 litre kit. My question is regarding temps when it is fermenting. I did a wet run first to try and get the temp down right and it went well. I was 2 degrees warmer at 22C than I wanted it when I spread the yeast though. So I whipped up a quick and dirty swamp chiller and have it hovering around 18C-20C. If it starts to creep up to 20C I turn the fan on and bring it back down to 18C or so. I know ideally you want a constant temperature while it is fermenting. Will a 1-2 degree swing up and down harm the fermentation ..read more

Water Filter Catastrophic Failure

Luckily for me I was actually in my beer shed when this failure occurred, and I have a ball valve isolation point just meters away and easily accessible.   It went off with a mighty bang and sprayed water all over the place, as the bottom of the bowl almost came right off just above the O-ring.  Had it happened when I was absent, the damage would have been severe, and the loss of valuable tank (rain) water could have been significant.  The filter housing is a standard 10" x 2.5" by Pure Tec, model FP10C, which is rated to 900 kPa.  My Grundfos pump delivers at maximum ..read more

Pressure ferment at ambient temps?

Every time I think I get on top of things, I get pushed back by the small amount of beers in kegs  I had 3 kegs blow last week and am now facing another beer crisis. I have one pilly going in the keg tomorrow and in its stead, I will ferment an Aussie lager I still have sitting in a cube. The other fridge currently contains the barley wine and this will be followed by a wheat wine to be brewed on Monday. Both will be bottled and aren't considered "drinking" beers. I can't change plans as I have the starters ready to rumble.  In order to get through this, I was thinking of a quick and ..read more
