For all the UK based vegetarians and vegans out there, I continue to impressed by the Aldi "Plant Menu" range. We're yet to try something that's less than OK, with most being really tasty. I can definitely recommend the Crispy Battered No Beef Strips and Battered No Chicken Balls plus the battered sausages are amazing. Just to confirm, that I do not work for them! Ingredients:
For the stuffed peppers:
4 long sweet peppers or Poblano chiles
150 gms fresh white Mexican cheese (Cotija is best)
100 gms cooked rice
2 medium tomatoes, diced
olive oil
For the salsa verde:
5-6 fresh tomatillos or green tomatoes
1 medium onion
2-3 Jalapeño or Serrano chiles
Handful of fresh coriander leaves and stalks
1 clove garlic

I've been on the hunt for a peanut butter based sauce for tofu that didn't use soy sauce/tamari/coconut aminos which all contain high levels of sodium which I need to avoid at the moment.
I came across one sauce that didn't have the above but the crispy coating for the tofu had it in it instead... so off to the drawing board and a design my own.
I'm basing this sauce on soy yoghurt but there's no reason add to why you can't use dairy yoghurt or other non-dairy yoghurt instead...

Gado gado is an Indonesian dish. It’s very flexible and can be easily adapted and made with whatever vegetables you have on hand. You can omit the eggs if you don’t eat them. This recipe is adapted from Minimalist Baker.

1 cup uncooked rice

My preference is to use previously frozen extra firm tofu, that's been defrosted and well drained. I find that the structure of tofu changes after freezing and you can get a lot more liquid out of the tofu. I also find it easier to throw the cubed tofu into my airfryer to crisp up. If you don't have an airfryer, you can shallow fry them in a little oil.

This recipe is almost embarrassingly easy - it’s hardly even a real recipe, but it’s become one of my go-to for a quick, simple, vegan lunch that uses ingredients I almost always have on hand.

Apparently, so I'm informed, this is a great snack for when you're craving something savoury without the mystery meat content of SPAM.
Honestly, I've no idea if it is or not, I've never had spam or anything even vaguely similar. The tofu was salty, the rice was slightly sweet and i think my tofu comes in bigger packets than the blogger's does!

You must have guessed it was coming?
Yeah, I know. I need more practice. The batter was a tad to thick by about 25-50ml of soy milk.
But the sponge is deliciously light and fluffy.
So.... this makes 12 (ish)
I used the bung it all in the food processor approach.... the mayonnaise was the egg free mayo I made yesterday and it was the version without mustard or apple cider vinegar.

So after my hubby came home with smoky vegan mayo instead of vegan mayonnaise, I was left needing to improvise and find up ways of using the stuff he bought.

I’m always looking for fun vegan recipes to try, and I really like this one! Artichokes are used in place of crab. If you have a shellfish allergy, this is also a good way to get something similar to a crab cake.
