Juice of 1 lemon
2-3 sprigs of rosemary
2-3 sprigs of thyme
3/4 tsp oregano
3/4 tsp paprika

3/4 tsp salt (omit if your broth is salty)
3/4 tsp black pepper
3/4 tsp garlic powder
3/4 tsp parsley

½ cup panko breadcrumbs
2 tsp all purpose flour

2 Cups of the vegetable broth (from the marinade strained first)
3 TBSP Soy sauce, or less to taste

Ingredients:
1 onion diced
2 carrots sliced
3 celery stalks diced
4 garlic cloves minced
3 cups veggie broth
4 cups water
2 cups dry brown lentils
1 bunch kale, cleaned and chopped
14 oz can diced tomatoes
2 TBSP tomato paste
2 tsp oregano
1 tsp basil
1 tsp cumin
1 tsp ground coriander
2 bay leaves
salt and pepper to taste

1 TBSP tahini
2 TBS soy sauce
3 cloves garlic minced or grated
1/4 cup water
1/2 tsp red pepper flakes

1/2 cup PB2 Peanut Butter mixed with water to make it runny
2 TBS coco aminos or soy sauce
1 TBSP rice vinegar
1 tsp Sriracha
2 cloves garlic minced
1 tsp ginger grated or minced
2-4 TBSP hot water
Skillet Veggie Ingredients

12 oz cooked pasta (we used Ditalini pasta)
Dressing from recipe below
15 oz chick peas (drained and rinsed)
1 cup celery diced
1 cup frozen peas thawed
1/2 cup red onion diced
1 cup red bell pepper diced
1/3 cup fresh dill chopped
1 tsp apple cider vinegar
1 TBSP maple syrup

(Mix all ingredients in a bowl and chill for 30 mins)

Easy and Oil-Free!!
2 tablespoons water
2 zucchini diced
2 yellow squash diced
8oz of corn (Fresh or frozen)
1 onion diced
2 garlic cloves
1-teaspoon kosher salt
½-teaspoon garlic powder
½-teaspoon black pepper
Dice the garlic, onion, zucchini, and yellow squash and set aside in a bowl with the corn. Put a medium size sauté pan on medium heat, add water, then add veggies to pan and stir occasionally for 20 minutes. After 10 minutes of cooking, add garlic powder, black pepper and salt. Continue cooking until softened. Serve with pinto beans, black beans, or in a burrito.

50g (about 4) Scallions diced
30g (About two handfuls) Baby spinach chopped
150g (10 cherry) Tomatoes diced
1/4 tsp Sea salt
1/4 tsp Pepper
1/4 tsp Dried basil
1/4 tsp Dried parsley

Ingredients:
8oz cooked pasta salad
1/2 chopped green pepper
4 fresh tomatoes diced
1 red onion diced
1/2 bell pepper diced
1/2 cucumber diced
1/2 purple cabbage shredded
15oz can chickpeas drained and rinsed
2 tbsp cilantro
2 tbsp basil
1/4 cup Italian dressing
some lemon juice
some lemon zest
2 cups of baby spinach
salt and pepper to taste
Add the past and all the ingredients except for the spinach to a mixing bowl and toss. Fill 4 large Mason jars to about 3 inches from the top. Fill the rest of the jar with the spinach. Cap, store in fridge and use within 5 days.

6 cups peeled sweet potatoes diced into 1" cubes
1 tablespoon garlic powder
1 teaspoon onion powder
1 teaspoon thyme
½ teaspoon pepper
1teaspoons salt
½ teaspoon paprika
4 cloves garlic minced
3-4 scallions diced (add at the end)
1-2 yellow and/or red peppers
1/2 cup veggie broth
1 yellow onion diced
Directions:

3lbs orange colored sweet potatoes
1 tbsp maple syrup
3 tbsp water
1 tbsp chipotle powder
1 tbsp smoked paprika
1 tbsp pumpkin pie spice
1 tbsp cinnamon
1 tbsp Cajun seasoning
1 tbsp chili powder
Directions:
Preheat oven to 425F. Peel skin off potatoes and cut into fries. Put them in a mixing bowl. Take a ramekin and add the maple syrup and water and mix well.
