Brewing Tips Friedhats - Ethiopia, Negele Gorbitu First up for Februarys Sub we have a great Ethiopian that really impressed us and has been a great fun to brew up. Brewing Tips This month we have 2 hugely different coffees to brew. The Sweet Valley is very easy to achieve a balance of flavours and it has lots of punchy in your face flavours so tastes really good at lots of different extraction levels. The Samuel Bermudez is packed full of complexity but is slightly more delicate and with this coffee it’s crucial to get the acidity shinning other wise it lacks the balance and can become more flat but when brewed well it is one of our favourite coffees for some time. Brewing Tips Hundred House Coffee - Rafael Amaya First up for Decembers subscription is Rafael Amaya from Hundred House, this coffee was a fun one to brew up. We quickly realised that this was going to be a coffee that had bold bright flavours at various different extractions. So we were immediately excited at brewing this coffee up knowing it was going to be a crowd pleaser. Brewing Tips Mok - Alex Bermudez First up for our brewing guide is the the Alex Bermudez. We hope you like this coffee as it has become one of our favourite coffees this year. Packed with juicy notes of raspberry jam and and Black tea. This coffee seriously impressed. Our favourite brewing method for this coffee was 15 grams of coffee to 250 grams of water. Brewing Tips Crankhouse - Shoondhisa First up for our brewing guide is the Crankhouse Shoondhisa from Ethiopia. At the cupping stage we picked this coffee for its delicate Orange peel notes which we wanted to bring out when brewing this up. Our favourite recipe for this was 18 grams of coffee to 290 grams of water with a total brew time of 3 minutes and 15 seconds. For us with this recipe the coffee had the orange peel flavour that we loved from the cupping and a great balance of sweetness and acidity. Brewing Tips Prolog - Aquiares Red Honey This is an amazing coffee and was a real pleasure to get a recipe for. With great notes of grapefruit and red berries it had a really clean full mouth feel. The best recipe we got for this coffee was 17g coffee to 300ml water. As always we start with a bloom at the beginning. Then a pulse pour to 200ml and let it drain and finish to 300ml. The brew time finished at 3 minutes 30 seconds. This was our first time brewing this on V60 and turned out to be the best recipe we brewed up. It had a really great balance of acidity and mouthfeel.
