I LOVE Victoria Sponge. For real. Its simple, easy, and if you want something sweet, but not too sweet, it just hits the spot. But then I have that whole gluten intolerance thing. Which is a major problem when the recipe only has six ingredients. But I decided to give adapting my recipe a try, and I was SO pleased with the results! Now, I made mine into large cupcakes and froze the extras, because if you’ve been doing any GF baking at all, you’ll know that baked goods dry out FAST. If you want a quick, cold, light dessert that’s delicious, this is it. Seriously. Its 4 ingredients and takes about 10 minutes to make. What’s not to love? You’re going to need a large mixing bowl, a mixer, a spatula, and your ingredients. And possibly a rolling pin or something heavy to crush your oreos. First thing – pour your pudding mix into the bowl, add 1 and a half cups of cold milk – it does have to be COLD – and then use your mixer to mix it for 2-3 minutes. For this recipe, I have a confession – I have not yet tasted Universal Orlando’s butterbeer. BUT – this is how I imagined butterbeer would taste based on reading the books. One of the things I was sad to say goodbye to when I found out I had a gluten intolerance was Pop Tarts. I mean, who doesn’t love a good brown sugar & cinnamon pop tart? Luckily, I managed to take a recipe I’d scribbled down eons ago from somewhere and altered it quite a bit, and then made it gluten free.
