You probably have already heard of the Greek dish lachanontolmades (stuffed cabbage) but if not, let us tell you that it’s one of the most delicious Mediterranean dishes. Lachanontolmades can be plant-based (with rice only), with meat or a mix of both (rice & minced meat). They are usually served with avgolemono (egg and lemon) or just lemon. At Greek Appetite, we love testing plant-based dishes and new combinations, so you can try different things that are not only vegan, but also easy, yummy, and of course healthy! That’s why we have tried an original vegan dish that you can prepare wit ..read more

Delicious Stuffed Zucchini and Peppers with Bulgur and Split Peas
Greek Appetite
by Pelagia & Mary - Greek Appetite

We like to save time, so “we feed two birds with one breadcrumb” by combining this dish with another salad (roasted peppers in the oven). If you do the same, put more peppers in the oven, keep part of them to stuff them, and part of them to marinate with oil and vinegar (see the recipe HERE) to enjoy the next day as a salad. Pay attention to the cooking time of bulgur and split peas because we want them to be cooked at the same time and not one to be melted and the other hard. That’s why you have to check beforehand (ask the producer if you buy in the local food market or see the cooking time ..read more

This “seafood” pasta is for you who are vegan or do not consume seafood for your own reasons but miss the “old” flavors. It doesn’t require a lot of ingredients, nor a lot of effort, but it does require a little patience because you have to do a little preparation the day before. The nori leaves will give you the sea taste, the soy sauce will give you an umami flavor, and the creamy vegan cheese will pair perfectly with the salmon style carrots and dill seeds. nori leaves salmon style carrots We didn’t add salt, but feel free to adjust it to your own taste buds and enjoy it as you wish! Stuffed tomatoes with black lentils, vegan mayonnaise and a hint of sea flavor
Greek Appetite
by Pelagia & Mary - Greek Appetite

Try delicious black lentils or beluga lentils, another variety of the gorgeous lentils, in a different vegan dish that everybody (vegans and omnivores) will love! Black lentils boil much faster than brown lentils, remain “intact” without getting mushy or falling apart, and have an earthy flavor that you can pair with many things. We thought of making a combination of “land and sea” with the addition of nori sheets. You can increase or decrease the quantities of all the ingredients and adjust the recipe to your taste, as well as you can boil a lot more lentils to keep them for the next day. Th ..read more

Somehow we missed tasting the “original” mac and cheese in the past, so we cannot promise you this is the exact version of it. What we can confidently say, though, is that it’s a very easy & fast meal with simple ingredients you most probably already have in your cupboard right now. Chickpea flour is one of the staple ingredients we always have because it’s versatile, healthy, delicious and gluten-free (if you avoid it). And the idea for this less than 30-minute vegan meal came to us last year after returning home exhausted and craving something quick and easy. So we opened our cupboards b ..read more

We love to show you how many delicious and healthy plant-based things you can do with simple ingredients! As we always say, no need to work harder, just smarter! One such recipe is that of the Greek tarama dip (or taramosalata) but in its vegan version. We thought how great it would be to eat a tarama with our gigantes (by the way, you can find our Greek gigantes recipe in our digital cookbook “Eat Like A Greek Vegan”).  As we LOVE recycling and reusing ingredients to avoid food waste, and to enjoy cheap but healthy vegan meals, we thought of taking a part of our boiled giant beans to te ..read more
