Roasting is for veggies! And one of my favorite ways to roast veggies is drizzling with olive oil, lightly salting then broiling. Cauliflower, broccoli, brussle sprouts, and eggplant – are my favorites to roast. Potatoes are a candidate for those that like that tuber. The great things about roasting is that it keeps the nutrients in the food, is not messy like frying, and is a healthier way of enjoying your veggies without the added oils. I haven’t shared a salad recipe in a while, and since we’re going to see some Summer weather this week (can’t wait), I thought I’d share this variation on the zesty Lebanese fattoush salad! Toasted whole wheat pita wedges take the place of fried white pita bread in this recipe, and they’re topped with a powerhouse combo of chickpeas, veggies, and a tahini green goodness dressing. Spaghetti & Meatballs was not a common dish at home where I grew up in Amman, Jordan.  A variation on meatballs- Daoud Basha- where the meat cooks in red tomato sauce with wing sliced onions is more common. My great grandma tete Nazo passed this dish along, among many others to my mom and dad.  However, the meatballs in this dish- Mediterranean Meatballs with Zaatar- are a variation on Kafta, where the ground beef is flavored with diced parsley and onion and is spiced up with a mixture of peppers. Growing up in Amman, Jordan, my dad has always enjoyed grilling at the roof top terrace at our house in Jabal Amman. Starting form the age of 4, I would watch him prepare, and listen to his vivid stories about favorite places to get his ingredients, including his long drives to the Red Sea shore in Aqaba. He would travel miles to get to local farmers, meat and fish producers- all to get the freshest most wholesome product that is out there!
