Asparagus Soup question

When a recipe calls for 2 bunches of Asparagus - I had to look up how asparagus is sold. Well, commonly it can be in 1.5 to 2.5 lb. bundles. That, to me is a huge difference! My question is if you were to read this recipe what would you consider "2 bunches". I ask because, to me that is a whole pound difference and I think, aside from price (sort of a big factor too), would it not change the overall flavour ..read more

Boston, MA - any local intel?

So, I have a possible visit to Boston in September. Very much not confirmed at this point, but I was wondering if anyone has any local knowledge that would be useful to a UK visitor and a US visitor? (My friend from AZ and I are debating meeting up for a bit of sight-seeing - and neither of us has been to Boston before). What's a good way to "get to know" the city? Where's a good location for a hotel base? (We won't have a car so would like to be within walking distance of at... Read more ..read more

Curing cast iron grill grates with conflicting info?

Got a charcoal grill that uses cast iron grill grates. (I've seasoned cast iron before, but never cured as most of the pans I've bought came already cured.) The grill's website info tells me how to cure the grates. Vegetable oil, 400 degrees F, 1 hour. I did this in the oven (as it was raining and I didn't want to try curing in the rain) and it produces a good amount of smoke. After airing out the house, I worried I did it wrong, then looked at the manual I received for the same exact... Read more ..read more

Char-Griller Deluxe says not to exceed 400F?

Got a new Charcoal grill today (a Char Grill deluxe model 2929) and was excited to use it. After curing it for about 4 hours at 300 F, I peeked in the manual once more and was dismayed/surprised to see this: "Never exceed 400 degrees because this will damage the finish and contribute to rust." Does this mean I need to keep the grill's temp always under 400 F or else I could ruin the grill? From what I know, charcoal grills easily can get up to 500-600 degrees (or a lot more) so I'm a bit... Read more ..read more
