Our February food and wine pairing is the very comforting and traditional French dish: Coq Au Vin. There are plenty of suitable matches with this dish, but as it is originally from Burgundy, we have paired it with a Beaujolais Cru, Morgon. This particular Morgon is a perfect match with coq au vin and is a recommended pairing by the winegrower. Risottos are perfect for this time of year. It is a great comfort food, really easy to make, and the flavours are endless! You can cook different risotto recipes following the seasons. Wild mushroom is one of the most popular ones, but spring flavours such as pea and asparagus are perfect and make a delicious risotto.
