This month, Foodland Hawai’i put out a challenge to their ambassadors to use one of their products in a creative and unexpected way. One of the products you could choose from was their Maika’i Pancake Mix. Pesto Egg Toast, a delicious breakfast or meal any time of day!
I came to the realization that I eat a lot of eggs. Usually sunny side up with a side of something else, or boiled and tossed into a salad. Air fryer mini potatoes are a fast and easy side dish that you can whip up for lunch or dinner. Every now and again, I buy the bag of Baby Creamer Potatoes from Costco. Because I’m cooking for one, I never use all 5 lbs at once. This is what makes the air fryer a great option. I can prepare the amount that I want for a meal and maybe enough to eat with a couple more meals, and then prepare a new batch when I need them.

Inspiration for the Air Fryer Kabocha Squash
I often buy the bag of kabocha chunks from our local Costco in Hawai’i. The kabocha comes in a bag and has been cleaned and chopped into medium size pieces. That cuts back on having to cut and clean the kabocha yourself. I usually simmer it, as I did for the Kabocha Salad Post but wanted to do something quicker in the air fryer. I’m always looking for new ways to eat canned tuna. Many people keep the shelf-stable food in their pantry. It’s packed with protein and can be whipped into a quick meal anytime of day. I’ve been loving Japanese simmered kabocha lately. I buy the squash at my local Costco. It comes cleaned and cut into chunks. The shoyu sugar flavor has always been a favorite, especially as a side dish at local okazuya spots.
