Happy Easter!! Here is the Easter afternoon dessert project. Keto knockoff of Starbucks Lemon Loaf.
Ingredients
• Cake
o 5 Eggs
o 2/3 cup of Swerve granulated (or any Keto sweetener)
o ½ cup butter
o 2 ¼ cup almond flour
o 5 TBSP coconut flour
o 1 TBSP baking powder
o ¼ cup lemon juice
o 2 tsp lemon extract
• Glaze
o 1 cup powdered Swerve
o 2 TBSP lemon juice
o 4 TBSP water
o ½ tsp lemon extract

Ingredients
2 cups all-purpose flour
2 cups quick oats
1 cup brown sugar
½ teaspoon salt
¾ teaspoon baking soda
½ cup butter
½ cup shortening
½ cup buttermilk or sour cream
Instructions
Preheat oven to 375°F, Mix dry ingredients together. Melt butter and shortening and mix with dry ingredient. Mix in milk until just combined. Don’t over-mix or oatmeal may turn to mush.

Another great recipe from All Day I Dream About Food. Made these to snack on and share this week. I used the Good Good brand no added sugar strawberry jam for the filling. You can find the recipe easily by googling the site and Poptart Bars. Tasty shortbread type cookie with the jam filling and a glaze. Super tasty for keto / low carb / diabetic friendly dessert. The jam is available in many flavors on Amazon. Had to pretty up the plate with strawberries so have them to snack on too lol...

I made some homemade Marscapone cheese recently. This is what I made it for...
The fresh marscapone was outstanding in this cake! This cake is not difficult to make by any means, just takes a few days because of the need to rest in the fridge between the steps. I wanted to use my new french crepe pan that I got for my B-day,

If you enjoy a dessert that is easy and PACKED with rich flavor, ya gotta try this one. I love my coffee black and strong, whiskey complex, and, now, my chocolate pudding decadent and stimulating (a holiday cheat for me).
I shigged the base recipe off the Internet, then made changes to improve the flavor. Gentlemen, my wife went nuts over this.

I ordered the cook book "Tasting History" that contains old recipes.
One of the kids made this recipe from his YouTube channel and stuck strictly to the recipe. Pretty good.
Surprising powered milk was no longer available at the store so we had to order it online and the powered eggs too.

Tried a new recipe, an Apple Custard.
Pretty good stuff, very moist and light, lots of apple flavor and not overly sweet.
Benefited from a light dusting of powdered sugar.
It'd be da'bomb with some vanilla ice cream.
Serves 4-6 people.
But I like more than just a few bites of dessert, so I'd be thinking 2-4 people.

4 medium apples
2T unsalted butter, melted and cooled but still liquid

Use to make these every year around Thanksgiving with my Grandma. Nothing special about the recipe, it's the one on the back of Nestle' semi-sweet chocolate morsels. She nurtured my love for cooking at a young age and I was always in the kitchen learning from her when I came to visit. Been baking these cookies once a year ever since she's gone. The smell of chocolate cookies baking is about the one sure thing that gets me in the holiday mood.
