These delicious Asian-inspired chicken meatballs pack a tangy flavour punch and are a lighter and healthier alternative to traditional meatballs, with the goodness of lean protein, whole grains, veggies and healthy fats.
They’re easy to prepare and work perfectly in silicone muffin tins so you don’t need to add any extra oil (the joy of silicone bakeware – they just pop right out!). Enjoy them as a main with a good couple of handfuls of Asian slaw on the side, or they make a tasty and satisfying finger food option if you’re entertaining.
Bon appetit!

Sometimes you come home in the evening and all you want to do is flop on the couch, have someone bring you a glass of wine and hope that the dinner fairy magically appears.

Ever found yourself standing in the bright lights of your open fridge, scanning the shelves for something to munch on, and not entirely sure how you got there?
Me too, I’ve been there. I didn’t go to the fridge because I was hungry. It was just an automatic response to feeling bored, tired, stressed or whatever other emotion I was feeling at the time.
The problem with this sort of “snaccident” is that emotional and mindless eating can lead us to overeat and it doesn’t even deal with the uncomfortable feeling that has led us to the kitchen in the first place.
