Skillet Paneer Cheese Fully Loaded Sandwich

I’m a huge fan of paneer cheese. It’s so versatile and I love the way it holds up as the main protein in sandwiches. Seriously, so grand. As I’ve mentioned in previous blogs, I cook so much during the week that I often feed a few of my neighbors. If you’ve never tried paneer cheese you’re seriously missing out. It’s similar to halloumi or bread cheese, but has a slightly different distinct flavor. One of my neighbors is vegetarian, so this recipe is for her! Other veggie-forward dishes you might enjoy include this Golden Mushroom Toast with Arugula, my Eat The Rainbow Breakfast Bagels, and th ..read more

Protein-packed, creamy fettuccine noodles with a twist. This dish is so incredibly flavorful, I know you’re gonna love it. If you’ve been to my little corner of the internet before, you know I love making fusion meals. Take a little bit of this, a little bit of that, and the flavor combo turns out so perfect. If you like this recipe, it’s similar to my Chili Garlic Spicy Pasta, and you might also like these Super Easy Peanut Sesame Noodles, or this Crunchy Asian Ramen Salad. INGREDIENTS FOR THIS RECIPE: While I chose to use fettuccine noodles, any shape of pasta will work in this recipe. I p ..read more

Savory Warm Bread Cheese Citrus Salad

Bread Cheese is similar to Halloumi, best served warm because it keeps it’s shape but softens in the middle. It’s buttery with a slightly sweet crust.  The textures and flavors in this dish are seriously the best. You’ve got crunchy, creamy, ooey-gooey, bright citrus, and sweet that’s perfectly married to spicy. I love making up all sorts of salads. If you’re looking for something that’s satisfying, yet a little different, make sure to check out my Butter Bean and Asparagus Salad, this Miso-Spiked Deviled Egg Salad (a blog favorite!), and my Kitchen Sink Mediterranean Quinoa Salad. Middle Eastern Beef Kofta with Creamy Za’atar Dressing

Beef Kofta is a main dish that is infused with fragrant spices and then baked or grilled. It’s super delish, I know you’re gonna love it. This meal was originally developed in the Middle East, but with such popularity you can now find it in multiple countries. I’ve got a few recipes on this plate, but today we are focusing on the little rounds of beef goodness. You can form them into meatballs or patties, or whatever shape your little heart desires. The real star is the blend of spices here… it’s absolutely phenomenal. I honestly could eat this on a weekly basis. They are prefect on their own ..read more

When it comes to Cauliflower Fritters, I want the works. Lots of herbs, melty cheese, and all that savory goodness. Crisp ’em up and serve with your favorite dipping sauce. Mmmmm. I grew up mostly on a vegetarian diet. I do eat meat now (and if you’ve been on my blog you’re well aware of that fact, lol), however, I still enjoy those vegetarian classics that remind me of my childhood. These little fritters are fantastic, but if you’re looking for other vegetarian-friendly recipes… be sure to check out my Favorite Air Fryer Falafel Sandwiches, My Grandma June’s Cheesy Potatoes Recipe, and these ..read more

Butter Bean Asparagus Salad with Citrus Vinaigrette

When it comes to making a raw asparagus salad, you know you wanna mix in some pillowy butter beans, bacon, walnuts, parmesan, and toasted breadcrumbs. The combination is simultaneously savory, refreshing, and absolutely delightful. Personally, I heart me some asparagus. When sliced thin, you can actually eat it raw. Hello, easy-peasy, no cookin’! I actually prefer it this way when making salads so you have a bit of a crunch. Trust me, it’s soooo good. I make all sorts of different “salads” in the spring. Chicken, Berry, Feta, and Arugula Salad with Sumac Dressing

This arugula salad screams springtime! Tender chicken paired with blackberries, feta, and a sumac dressing that brings it all together. We also add saffron-infused barley, which makes this dish a hearty meal that’ll satisfy your entire family. Oh, and don’t forget the flatbread chips for extra crunch!  When the weather starts to turn, I’m all about main-dish, dinner-worthy salads. No lettuce with croutons and a store-bought dressing. I’m talking about piling high a truckload of ingredients that marry together flawlessly. Besides this gem right here, other favorites include this Sunshine ..read more
