Coffee from Papua New Guinea has always been one of our favorites. We first roasted PNG coffee nearly 15 years ago, as a dark roast substitute for Sumatra. However, as a washed coffee, it doesn’t really fit a typical Sumatra flavor profile. Over the years, we kept coming back to it as a single origin and the roast profile got lighter and lighter.
This particular PNG has the most intense flavor profile out of all the ones we have purchased. It pulls flavors similar to a Kenya coffee with a creamy, butterscotch aroma, citrus acidity and sage-like undertones.

Freezing roasted coffee to preserve shelf life has been around for a long time. The benefits of freezing roasted coffee are exaggerated, to be sure. Once you open that bag of frozen coffee, the quality of flavor drops off within a few days. But, does the same thing happen when green beans are frozen? We wanted to test a theory that freezing green prolongs the shelf life of green coffee.
Green coffee is the seed of a coffee cherry. Coffee can be harvested throughout the year in large countries. Those countries have vast climate diversity, so coffee ripens at different times throug ..read more

Building Habits for a Better Earth & a Better You
Our habits create the frameworks of our lives. Maybe your habits are as simple as feeding the dog, brushing your teeth, or greeting the day with a few minutes of stretching. For many of us, the habit of a morning cup of coffee or tea is the touchstone of our morning that gets all our other routines started. This year for Earth Day, we wanted to encourage our friends to consider ways they can build off of that pattern to add a little extra eco-friendliness to each day.

April is Earth Day month. Back in 1970, Earth Day was established by Gaylor Nelson, a senator from Wisconsin. It was such a successful movement, that in December of the same year, congress created the Environmental Protection Agency (EPA).
At its heart, Earth Day carries the commitment to doing what you can where you are. Yes, it has national recognition, but it still takes individuals to make a difference. This begs the question, what are we doing to embrace the ideals of environmental stewardship?

As 2023 heats up, so do the trends. If we learned anything from the past three years, it’s how to stay nimble and adjust to changing environments. Most of us are not operating the same way we did pre-covid, but we can’t slow down or stop evolving now. If anything, we need to step on the gas. Trends are just that, they come and usually go. However, as Gen Z and the new Gen Alpha (born 2010 through 2024) become cafe customers, they expect a constant stream of newness. Here are a few trends to be aware of and hopefully adopt if you haven’t already implemented them.
