Vegan jam tarts are easy with the right recipe. It only takes a handful of common ingredients to make a plate of fresh, home made jam tarts. Frankly, it’s pastry cases with jam in. Some are better than others though, so it was well worth figuring out a good recipe. How to make perfect vegan jam tarts To ensure they’re flaky handle the uncooked pastry lightly. The problem with stretching or kneading pastry dough is that it tangles up the protein in it and makes it go tough and hard. Crisp, flaky shortcrust pastry is a crucial feature of a good jam tart. To make them crisp, bake in a hot, p ..read more

Vegan Garlic Bread

Sharing this vegan garlic bread recipe has been on my to-do list for way too long. You can buy a similar looking garlic bread loaf from many stores, but that’s where the similarity ends. This bread has fresh, tangy garlic and crisp parsley – and it only takes a few minutes to make! It’s wonderfully soft inside with a crunchy, golden crust. I’ll share the trick for the perfect, crispy crust later in the post. Why use fresh garlic and herbs? Freshly crushed garlic has the widest flavour profile because it still has the bright, tangy flavours. The key thing is that garlic cloves release their fl ..read more

Vegan Paneer Butter Masala

I love a good restaurant style paneer butter masala. There’s something unique and delicious about biting in to the chunky paneer cubes. First the rich, tangy curry sauce, then the soft, buttery and creamy inside reveals itself. It’s a perfect balance. The only challenge of course is making a good vegan panner butter masala. How to make vegan paneer butter masala Anyone who has cooked a traditional paneer butter masala knows it’s a dairy heavy curry. To make the sauce right we will need to replace the cream and butter while maintaining the characteristic richness, flavour and texture. Then the ..read more

Garlic Coriander Vegan Naan

I’ve been enjoying and experimenting with this vegan naan recipe for years. I first created it long before I became a vegan. Fortunately, the dairy yogurt can be replaced with soy yogurt, so I quickly veganised my recipe and kept on making it. There’s a number of vegan flatbreads in Indian cuisine. Roti and chapatis are often vegan – or at least easily made that way. Naan isn’t typically vegan however. But it’s one of my favourite indian breads, so I had to make a vegan recipe. Home made naan is absolutely worth it too, because nothing from a packet has ever replicated the soft yet chewy text ..read more

These vegan bao buns combine a super-soft steamed dough with an umami-rich filling made of mushrooms, leeks, and tempeh. Best enjoyed hot and fresh from the steamer. I’ve been exploring more Asian cookery lately (check out my posts on creamy vegan peanut stir fry and how-to cook Japanese rice). I’m a huge fan of everything bread however, and a vegan version of these traditional buns looked like a great idea. Often they’re stuffed with pork, but I’m using tempeh. This is my first tempeh recipe – and I’m sure it won’t be the last. Making vegan bao dough I love making this dough, it’s just so si ..read more

This easy vegan blueberry muffin recipe is soft, lemony, and packed with fresh blueberries. It also has a clever shortcut for making the easiest crumb topping ever, so you’ll have a plate of fresh muffins in no time. Building flavour with plants I’m using one of my favourite tricks for building flavour and richness in vegan baking – ground almonds. They give these vegan muffins a much richer flavour than any other vegan muffin I’ve tried. I also found a little bit of fresh lemon zest makes the perfect accompaniment to the sweet, juicy blueberries. What’s the difference between a cupcake and ..read more
