Recipe and blog post updated August 7th, 2023 One of the things I love most about Panzanella Salad is its ability to use up old bread. The bread is toasted and adds a crunch that contrasts beautifully with the juicy tomatoes and basil leaves. The contrasting textures make this recipe a favorite in our home. I also love to add varying summer fruit that I have one hand to add sweetness to this dish. Panzanella is a classic Tuscan salad, that is made in the summer using up old bread. I was introduced to it via What’s Gaby Cooking. This recipe is adapted from FoodNetwork.com The vinaigrette is on ..read more

Last week during the Vegan Challenge on MasterChef I made falafel and won the immunity pin! Yes they were that good ? I am sharing the recipe I used for these delicious morsels of chickpea goodness. These were so good, Chef Aaron Sanchez said the following: MasterChef season 12, episode 7 ? This recipe is not traditional in that it begins with canned chickpeas. Please understand that while in the MasterChef kitchen there is not enough time to soak, cook and process dried chickpeas. So I found a way that works beautifully within the time constraints. It does have a bit of added flour but the e ..read more

Toum Garlic Sauce Recipe

In Arabic, garlic means Toum, so the title of this recipe is a bit repetitive; Garlic, Garlic Sauce. If you’ve ever been to a Middle Eastern restaurant, you’ve probably tried the thick, white, garlicky sauce with shawarma or chicken tawook. This recipe is simple and calls for only a few ingredients. The more important aspect of this post is the technique. I highly recommend using a high speed blender like a Vitamin of Ninja. I have made this successfully in a food processor, but did need a 1/4 cup more oil. If using a food processor, I would recommend making a double batch. Tips Be sure your ..read more

Fluffy, cheddar biscuits are the perfect accompaniment to any meal. I used Cabot Pepper Jack Cheddar in this recipe and it provides the perfect kick of heat and pairs nicely with the smoked paprika. Feel free to use a regular cheddar for this recipe. Tips for making biscuits: -Do not overwork the butter. There should be pieces of butter still visible. -Make sure the dough is cold, it is okay to place in the fridge for 10-15 minutes. -Get creative-other herbs like rosemary and thyme are delicious in biscuits. Aside from the incredible product, one of the reasons I love Cabot is because it is a ..read more

It is important to grate your garlic very finely, as the garlic butter is brushed on after baking. These rolls keep well in an airtight container in the fridge for 3 days and can be frozen for a few months. Simply reheat in the oven.
