Braised Moroccan Turkey Meatball Stew

One of my favorite easy, one-pot meals bursting with flavor and savory aroma. These spiced turkey meatballs over aromatic basmati rice make for a perfect dinner to share, but the leftovers are even better!  Technique What makes these meatballs so delectable is how they’re cooked. No baking or frying here! You’ll use a cookie scoop after the meatballs are mixed to drop them directly on top of the stew. Securing the lid after dropping the meatballs in, ensures they steam through, infusing them with all the warm spices in the stew. Using a large dutch oven with a tightly fitting lid wo ..read more

One of my all time seasonal favorites, this sweet quick bread is great for breakfast, or served as a dessert with ice cream or whipped cream. It makes a great gift as well!  Technique Sifting all the dry ingredients together creates a light and clump free final batter. Adding chopped cranberries and zest into the sifted flour before adding into the wet ingredients prevent them from sinking to the bottom of the batter while baking, ensuring even distribution throughout the loaf.  Wrap it up Edible gifts are truly the most thoughtful, so make an extra and bring to your nex ..read more

Creamy Chicken & Mushroom Pasta

Creamy and cozy, this quick and easy pasta dish is a healthier version of a dish that can really weigh you down.  Building layers of flavor Anytime you cook with mushrooms, it’s always so important to start with them first. Adding seasoning and chopped mushrooms to the pan first will help keep your sauce from being watered down and full of flavor. Mushrooms hold a lot of liquid prior to being cooked, so evaporating that liquid so the mushrooms can absorb seasoning is a surefire way to create the best flavor possible.  Critical Equipment Pasta water, or many times refereed ..read more

When the weather starts cooling down, let this spicy pasta dish warm you up from the inside out. Creamy, sweet, spicy, and oh so cozy, this recipe is the perfect autumn meal. Prep Time When you’re shopping for spicy Italian sausage, if all you can find are links rather than bulk in a meat case, not to worry! Simply remove the casing and break apart with your fingers.  I prefer to roast the squash and sausage, but this step can absolutely be done stovetop. Start by browning the sausage, removing after crispy. Add the squash directly into the pan, leaving the rendered fat from the sau ..read more

Shallot & Mustard Chicken Thighs

One pan, one great meal. Let this crispy, tangy, juicy chicken dish be the perfect gateway into autumn cooking. This is one of my favorite quick and easy dinners to make for a last minute diner party, as it’s perfect to share, and has minimal cleanup. Pro Tip The reason this dish works as a one pan wonder is because the base of the sauce is made from the pan drippings of the chicken thighs. The recipe calls for bone-in skin on, which has enough fat that will render in order to sauté the shallots before adding the stock. If you choose to use chicken breast or skin off thighs, you will need ..read more

In my mind, there is nothing more versatile than the humble quiche. It changes with the seasons, can be enjoyed during any meal or time of day, and can be custom made to suit your taste within seconds.  For this autumn inspired quiche, I incorporated a seasonal squash for beautiful color and texture along side crispy prosciutto and tangy goat cheese. I even used up the remaining kale in my garden for some gorgeous flecks of green that not only taste great, but look great too.  prep time For this recipe, you’ll be directed to par-cook the squash and prosciutto prior to adding it ..read more

Another Meatless Monday classic. This Indian curry dish is a new staple in our monthly meal planning, thanks in part to the ever wonderful Crockpot. “Set it and forget it” is the key phrase with the delicious and versatile dinner! Mix it up If Meatless Monday or keeping this dish vegan is not a concern for you, try adding in ground beef. If it is, there is always the great option of Beyond Meat ground beef substitute, or the Beefless Ground Beef found at Trader Joe’s.  As far as crockpots go, this is not the area to splurge. A simple one with three settings will do just fine. You ca ..read more

This pasta is hands down the most delicious, nutrient dense, hardy pasta dishes you might ever create! Huge fresh flavor and a rainbow of color makes this pasta stand out from anything you’ve made in the past. Building Layers As with any recipe, it’s important to start this recipe by building layers of flavor. Start with the ingredients that will take the longest to cook, season as you go, and add in remaining ingredients as the sauce cooks down.  Gluten free & Vegan optional Looking to make this pasta so everyone can enjoy?! There are no bad days when a Rainbow Sammy is served for lunch. It instantly brightens your day and brings a smile to your face! Colorful, cheerful, and downright delish, this clean and flavor packed sammy is about to be your new go-to lunch.  High and Mighty There might not be a pot of gold at the end of a rainbow, but there is a mile high veggie sandwich!  Two of my favorite things to incorporate in this sandwich are fresh hummus and quick-pickled red onions. Fast and easy to make, you’ll use both on plenty of other dishes, so always keep a batch in the fridge.  ..read more
