A few months ago, I was sitting at the Southern Coterie Summit listening to some amazing women talk about expanding brands, and I immediately knew the next direction I wanted to take The Dinner Darling. For as long as I can remember, I have LOVED party food. I love to make it, I love to serve it, and I absolutely love to eat it. Serves: 6 | Prep Time: 20 minutes | Refrigeration Time: 20 minutes Ingredients:
1 bag milk chocolate chips
1/2 cup unsweetened cocoa powder
3/4 cup granulated sugar
1 cup mini marshmallows
2 blocks almond bark, melted
Sprinkles
Directions:
Melt your chocolate in a microwave-safe bowl for 15 second intervals. Stir each time you remove, and test the temperature. Keep it below 90 degrees and more than 82 degrees (apparently this matters)! I did this about 4 times and the last time, I kept stirring until it all melted.

U.S. Farm-Raised Catfish Bread
Serves: 8-10 | Prep Time: 5 minutes | Cook Time: 35 minutes
Ingredients:
3-4 whole #uscatfish fillets
2 tbsp olive oil
2 tbsp Cajun seasoning
1/2 cup unsalted butter, softened
1/2 cup mayonnaise
1/4 tsp garlic powder
1 tbsp Worcestershire sauce
1 tbsp hot sauce
1.5 cups shredded sharp cheddar cheese
1/2 cup freshly grated Parmesan cheese
1/4 cup diced green onions
1 large loaf of French bread

Prepare a large baking sheet with non-stick spray or parchment paper and preheat your oven to 350°.

Over cheese grits topped with a beurre blanc sauce
Serves: 4 | Prep Time: 5 minutes | Cook Time: 15 minutes
Ingredients:
4 whole U.S farm-raised catfish fillets
1 tsp salt
1 tsp smoked paprika
1/2 tsp dried oregano
1/2 tsp dried basil
1/4 tsp cracked black pepper
1/4 tsp garlic powder
2 tbsp olive oil, for drizzling

1 cup quick cooking grits
4 and 1/4 cup water

Sheet Pan Chicken Fajitas

A few months ago, before the Covid-19 numbers spiked in Mississippi, I was asked to help with the food for a good friend’s baby shower. Shower food is my love language, so of course, I was happy to do it. One request – all of the food must be in individual containers, and safe for consumption. A challenge? I love a challenge. Let me start by saying, I love to cook and eat, obviously, and I despise working out. Well, I despised working out up until about 6 weeks ago. Almost a year ago, I started following Anne Snow on Instagram, a precious local girl with a bubbly personality that just draws you in. Make your own Pizza Party – Grab some of your favorite pizza toppings, and have a pizza party. We love using Stonefire Naan Bread for the base and making individual pizzas. The kiddos love them, and they get to be a part of the process. I also LOVE to use leftovers on a pizza. Ever had pot roast pizza? it’s delish!
