On a Wednesday night in the artisan pizza restaurant Marlow in Pukalani, customers gather behind the large marble host stand that separates the open kitchen and sleek dining space. The host, generally a server or kitchen staff, shows guests to their table in the airy dining room just past the house olive plant.
