The Best Summer Wines for Camping
The Camper Kitchen
by Sarah
2y ago
Summer is in full swing which means it’s time for beach days, long hikes, picnics, and of course camping weekends. While beer is always a refreshing summer favorite, this is the time when lighter wines really shine. Here are 6 of the best wines for camping in summer. 1. Zesty dry whites High acid, dry whites are fantastic in summer. They tend to have refreshing citrus notes that go great with salads, seafood, and lighter dishes, but they also have enough flavor to be great on their own. Try a mineraly and citrusy Sauvignon Blanc from New Zealand or Chile. Or try an Albariño for a lesser known ..read more

The Best Blistered Shishito Peppers
The Camper Kitchen
by Sarah
2y ago
Blistered shishito peppers are one of those recipes where it’s so easy that I almost feel silly calling it a recipe. It only calls for 3 ingredients, and it’s the perfect mix of salty, sweet, and sometimes a bit of heat! Credit for this recipe goes 100% to our friends Liz and Dennis of Eat See RV, who introduced us to the magic of blistered shishito peppers when we got together with them last year. It was so easy to make and so delicious that they’ve become a staple in our cooking repertoire. (The peppers, not Dennis and Liz. They’re currently in Mexico – you should check out their Youtube ch ..read more

Instant Pot Chile Verde
The Camper Kitchen

Around here we have two instant pot chile verde recipes. One is a pretty authentic weekend style recipe that involves roasting the peppers and tomatillos and throwing everything into a blender before cooking. Then we have this instant pot chile verde recipe, which is our “throw in a bunch of ingredients and walk away” version. It still tastes fantastic, but takes less than half the time with next to no effort. And that’s why we end up making this version most of the time. Watch the video: I’m also pretty excited because this is our first video recipe on The Camper Kitchen! We’re still learni ..read more

Grilling 101: Basic Grilled Steak
The Camper Kitchen
by Sarah

Welcome to another installation of our Grilling 101 Series. Today we’re walking through how to cook a basic grilled steak on a charcoal grill. Prep: Season both sides of the steak with olive oil. Or don’t. We’ve had debates over this with extended family members on whether or not you should oil the steaks. We’re firmly in the yes category, but you do what you want. Season both sides with salt and pepper. Sometimes we’ll use Seasoning Salt or Johnny Salt instead, but typically we go with basic salt and pepper to bring out the natural flavors of the steak. In the meantime, get the grill ready ..read more

4 Ingredient Easy Tomato Sauce
The Camper Kitchen
by Sarah

Looking for a go to meal with ingredients you probably have in your pantry and takes next to no prep? This easy tomato sauce uses only 4 ingredients and is one of our favorite easy meals when we are feeling super lazy or don’t have any idea what to make for dinner. We usually have butter and an onion in the kitchen, and we try to keep a can of crushed tomatoes around exactly for this reason. In fact, Kacey credits this recipe as the meal that kept him fed when he was too tired to go to the grocery store after his 16-18 hour work days back when he used to live in the RV for his job. I just thi ..read more

Rice Pilaf on the Grill
The Camper Kitchen
by Sarah
2y ago
As a college student, rice pilaf was one of the first recipes Kacey learned to cook. Over the years we’ve tweaked it a bit, but the recipe pretty much stayed the same until one summer day when we were grilling steaks and wondered if we could make pilaf on the grill instead of on a stove. Turns out you can, and that grilled rice pilaf is delicious. I mean, it’s buttery beef flavored rice and noodles, what’s not to like? This is a great recipe to make if you have extra coals that you don’t want to waste. Prepare your grill for two zone cooking – whether you’re using gas or charcoal, keeping the ..read more

Welcome to 2020!
The Camper Kitchen

Happy January everyone! I hope your new year is starting off well. I wanted to give a quick update on our 2019 and plans for the blog for 2020. To begin with, we sold our Lance travel trailer. We’ve been going through some job transitions over the past few years that have kept us in one place without the ability to travel. Lance was sitting in storage and not getting any use, so we decided it was time to sell him. As luck would have it, almost instantly after selling the rv our jobs changed, free time opened up, and we seriously regretted our decision. We looked at each other and had one of t ..read more

7 ways to eat healthier while RVing
The Camper Kitchen
by Sarah

A lot of the questions we get revolve around eating healthy in an RV. With long drive days, working on the road, and a lack of consistent gym work outs, the RV life can get sedentary fairly quickly. Sure we try to hike, bike, and do water sports as often as we can, but how many times after a day of driving or adventuring do we turn to easy meals regardless of how healthy they are? A lot of times this means processed foods and making the convenience factory a priority instead of our health. And that’s not great for our bodies. So we’ve put together 7 ways to to help Rvers eat healthier while on ..read more

Grilling 101: Simple Grilled Salmon
The Camper Kitchen

Today we’re going back to basics. While not super exciting, a simple grilled salmon recipe is a great option to have in your grilling arsenal. Once you learn the basics you can easily dress it up in all manner of ways. If you even feel like it. We find that the easy seasoning and fast grilling time is our usual go to when we just can’t be bothered to do anything fancy. Season both sides of the salmon with olive oil, salt, and pepper to taste. And that’s it. Seriously, this is as easy as it gets. We keep the seasonings fairly neutral to bring out the natural flavors of the salmon. Of course y ..read more
