To create a meaningful life for you and your family in our industry, you have to learn how to become the best server in any restaurant you work.
It took me three to six months to establish myself as the top waiter in the restaurants I worked. It’s a short period, but I had a secrete:
-Every time I am invited for a job interview, I prepare myself exceptionally well; I learn everything I can for the company from the outside.
-Once I get the job, I will ask the manager to send me the menu, the wine list, and the rules of service they apply so I can study them.
Those two steps will help me hit the ..read more

What is leadership, and how do you become a leader
– let’s first establish what is not leadership: Being a manager or a supervisor does not make you a leader. A formal position gives you authority, and people will follow you and execute your orders solely because of the status of your job. That doesn’t mean you are a leader, but it doesn’t mean you can’t become one. We will continue this discussion assuming that you are either a manager who wants to be a great leader or someone who aspires to be a leader and grow to become a manager. The most simplistic explanation of a leader is a person who ..read more

Alpino was a beautiful, Italian restaurant inside a five-star, luxury hotel in the Swiss alps, and it was underperforming when I got there.
The upper management was not aware of the real problems and wasn’t willing to take action as long as the restaurant wasn’t losing money. (restaurant mistakes: #1 – don’t wait till you start losing money to make changes)
At the same time, the waiters were quitting, and finding new staff was getting harder and harder. (restaurant mistakes: #2 – no exit interviews – this is the best way to uncover the problems in the company)
It took me a few days to realize ..read more

This employees turnover message from a small family restaurant in Italy resonates painfully throughout the world of hospitality.
Nowadays, managers and restaurant owners from every country and size have this exact problem. And it is not that we have never had this before, but now it is different. You could always find another waiter and never skip a beat in the past. Those days are over! No waiters are waiting at the door to get a job, not to mention a quality waiter with knowledge and experience.
But there is a cure to the employees turnover problem; many c ..read more

Before I show you how to deal with rude guests, let me tell you a real story:
-Here is your meal, sir – I placed the plate in front of the old man and very politely asked – would you like to have some salt or fresh black pepper?
The gentleman was very old. Obviously, he could not take good care of himself because he was always stinking badly when he visited the restaurant. But, unfortunately, the man was a famous professor, with a lot of money and a terrible attitude, who I had to serve daily:
-You have never worked in a restaurant like this before, did you – he hissed at me with terrifying an ..read more

Why the waiters should perfect their selling and upselling techniques?

Here is a brief account of how important it is to train your waiters well:
If one server sells today to 10 tables, 20 dollars more worth of food or drinks, he will increase the revenue by 200 dollars. This is an extra 6000 dollars for the month if you work seven days a week, and 72 000 dollars for the year! Assuming we have five waiters in an av ..read more
