This came out so good and was really filling. I could barely finish one portion so I think next time I’ll tweak some things to make 3 servings instead of 2. I started with the green giant frozen medley in the pic above. I used cabbage coleslaw mix and zucchini to add volume. You could certainly use a different protein as well. If you’d like the recipe/directions lmk I wrote them down for myself. ?

Red bell peppers, nature's dippin' dots, chanterelle mushrooms, salt/pep/garlic powder and cheese. Fry the veg together, kill the heat, stir in the cheese (grated), cut the peppers in half, fill and toss them in the air fryer for 10 mins on 200c. Extremely simple and satisfying. Would work well with meat, too, or you could make it vegan by using a non-dairy cheese. I ate mine with sweet potato fries, but honestly you don't even need a side.

Some frozen strawberries cut up into pieces ( I did 120 grams)
one packet stevia ( 2 grams )
1/4- 1/2 teaspoon citric acid
Tastes really good :) Just be careful not to use too much citric acid since it’s very strong!
