70yr old Fiorenza makes “tortello cremasco” from the town of Crema, in the Lombardy region. This pasta has a filling of “amaretti” cookies, candied citron peel, mints (the sweets not the herb!), raisin, nutmeg, “mustasì”cookies and grana padano cheese.
