Oh my gosh, who doesn’t love peach cobbler in the summertime?? With a big scoop of vanilla ice-cream, you can’t go wrong. We love this simple easy cobbler but sometimes it is just too hot to have the oven on in the middle of summer so I freeze the peaches when they are ripe and then make the cobbler in the fall when it’s not so hot out. This spicy peach salsa is absolutely gorgeous! The combination of colors creates a beautiful presentation, while the delicious blend of sweet and spicy flavors makes it a wonderful addition to simply prepared fish, chicken or pork dishes.
