One of my favorite things to do during the summer is grill various meats. Whether this be steak, burgers, pork or chicken meat always tastes better when grilled.
This week, my weekly clients got a taste of the Middle East with Grilled Persian Kofta. There are many ways to make them, but I use a blend of ground beef and lamb, parsley, allspice, cardamom, sumac, nutmeg and paprika for a pretty traditional taste. Growing up in an Italian American household meant lots of Italian meals. No meal was more special then Sunday “gravy,” red sauce, meatballs, spicy sausages, rolled pig skin and, on special occasions, beef braciole! Beef braciole are comprised of a very thinly pounded cut of beef, typically flank steak, stuffed then rolled with cheese, herbs and breadcrumbs. I love experimenting with different cuisines. The variations in spices, flavors, smells and tastes are truly extraordinary. This week, I’ve chosen to provide the recipe I used for one of this week’s meals - Chicken Yassa - a West African dish comprised of chicken braised in onions, with a little kick from a scotch bonnet pepper.
The basic ingredients are:
parts from one whole chicken (leg quarters, breast halves, wings)

Sometimes, the most delicious meals are the easiest to make! Simple ingredients, simple processes, yield incredible results. Combining boneless, skinless chicken thighs with two parts REAL maple syrup, one part dijon mustard, marinating overnight, then wrapping in applewood smoked bacon makes a wonderful dinner. The wrapped thighs are lightly browned in pan on the stove, just until the bacon begins to color, turning occasionally. Once browned, place in a 350 degree oven and cook until the internal temperature of the chicken reaches 165 degrees, about 20 minutes.
