Midway into my second batch of Moscato. First time I did a gallon kit and it turned out amazing, just felt like so much work for only a few bottles. This time, I did a 5/6 gallon kit and found this after 14 days! I reached gravity and transferred it to a carboy when I found this. Is this yeast cake normal ..read more

Cork Frustration
Wine Making Talk

I really want to use a 1 3/4" cork, either Nomacorc or Diam would be great, but I'd like them to be chamfered. Unless you're commercial winery or you just make a lot of wine, buying in bags of 1000 just isn't practical. It seems like the industry doesn't care about home wine makers and they relegate you to just the shorter cork. I've looked at the Diam 5, and the Select Green 900, but only found in 1000 ct. Does ANYONE know where I can find better corks in smaller quantities ..read more

Hoses clip for All In One vacuum pump
Wine Making Talk

I thought I would share a gadget I made with our 3D printer. It's a clip to hold the hoses for the All In One vacuum pump. I've had one for 10(?) years and the weight of the hoses would always cause them to shift as I was bottling. I bottle alone and like to cork in batches so it was difficult to keep the bottling plug from moving around and touching an un sanitized surface. The clip is designed for 3/8" and 1/2" OD tubing. Here are some... Read more ..read more

Howdy, folks. This is only my 8th kit, spread over 12 years. This Amarone style kit includes two yeast packets. Based on reading the forum, rather than pitching both at once, I first pitched an RC212 yeast starter, then later the EC-1118 starter. Started 2/5: OG 1.084, pitched RC212 yeast starter. Fermentation was not dramatic, but seemed okay to me. On 2/12, SG 0.999 On 2/14, I added the EC-1118 yeast starter and... bupkis. I have seen no evidence of fermentation since adding... White particles floating right below the surface, Winexpert Sangria Kit
Wine Making Talk

Good evening, Brand new here and am still learning. I started a sangria kit and after the fermentation stage, racked it, degassed it, and added juice and the chitosan. 6 days later, I see some off white particles floating right below the surface of the wine, nothing on top. The particles appear like undissolved aquarium fish flake food. Should I rack it again and add some bentonite ..read more

Almost 2 year old LE 19 South Africa Cape Blend is now Tasting Off

Hi All, I have a 2019 LE South Africa Cape Blend in which I still have quite a few bottles left. I've been drinking it slowly, though we typically don't start into our wines until 12-18 months. It's been a good wine until a bottle I tried this weekend, it tasted super alchoholic. Very Alchohol forward and lost a lot of it's charachter. We used synthetic corks. The one thing with this wine, is we experimented and did not add sorbate or k-meta. We did this to see if it would impact the wife... Read more ..read more

New Winery Space and Cellar Plans
Wine Making Talk

Well the addition is coming along but I tweaked my back yesterday so instead of hanging drywall I’m drawing up plans for the new winemaking space. I have a little more than 700 sq ft of basement space to play with. I’ve been thinking about this a lot but this is the first time I’ve put it to paper. I’m really excited about this space. My only regret is that I couldn’t make It a walk-out basement. At least there are only 7 steps. I’m drawing up plans for a chair-lift type... Read more ..read more
