How to mold cookie dough without it rapidly warming up?

I'm working with a cookie recipe that requires the dough to be refrigerated for several hours before molding it into detailed shapes so that it will retain that shape after baking. In the past couple of days however it's become so hot that the dough becomes too warm within 5 min of handling it, causing it to blow out in the oven and become misshapen. Baking it straight out of the fridge works well but the main issue is that I literally can't mold it with my hands when it becomes too warm. Why are there so many pores/cracks? and the cookies don’t have an even thickness throughout the cookie even though I rolled out with those 3/8” discs. I’m trying this recipe out for the second time. The first time was for Easter and the cookies were smaller, and they turned out more like the right picture even though I am using the same recipe.
