I just quit one of my jobs so am getting back into baking! I wanted to make Stella Parks recipe because I love anything Serious Eats, but I had to have them ready to go for tomorrow morning markets, so went with a quicker option with a 2 hour proofing.

i followed the recipe below with the addition of 1/2 tsp cinnamon and 1/8 tsp cardamom! i also substituted buttermilk with a 2:1 ratio of milk:sour cream + a bit of lemon juice. the batter was sort of lumpy - it reminded me of pancake batter consistency - i left it lumpy bc i didn’t want to risk over mixing

i think this turned out great! the cake is very light and it let me use up my ripe bananas - a fun alternative to banana bread :)
