What is Going on With American Single Malt?

My apologies if there is something I am missing, but I haven't been able to find any information on the TTB's proposed American Single Malt definition or a release date. I can't find anything in the TTB Public Guidance section, the Class/Type designations and the Chapter 4 Class/Type resource is still listed as 04/2007. The last mention of anything was a flurry of articles written in Spring 2023 and a docket update stating "01/00/2024" as the final rule date, but nothing since. Howdy all,  I'm hoping you can help me understand something... So I crunched all the numbers on the Crampton and Tolman papers, and I see that the average ratio for the ryes is 85r/15mb, and bourbons 75c/13r/11mb... but when I run the DP on those recipes, they are severely lacking in power (even using distillers malt which wasn't available until like the 1950s) needed to convert the mash . How were they getting proper conversion if they weren't using exogenous enzymes ..read more

Hey guys, Well, I’m finally able to say that I’m launching my first product line in March, Celtic Honour. It’ll be a series of blended bourbons I've sourced in small batches from distillers throughout Appalachia. The plan is to work the NC ABC and prove concept for a phase two scale that will include a tasting room and wider distribution. Bourbon yield question

Hello forum dwellers! This is my first post, though I have been lurking for quite some time. I was hoping to get some advice, or at least possibly some insight, into a yield question. We are distilling bourbon from a corn and wheat mash (64% corn, 26% wheat, 10% malted wheat) on a 6 plate hybrid still (Figgins reciprocating 2000L). We do a single pass with all plates active. Our distiler's beer averages about 10.5%, and our yield per run has been about 82 proof gallons for the last year (final distillate at ~135 proof). Let's say that you had several different corns that you were wanting to compare flavor profiles on, and you wanted it all to be one mash bill, except for the corn.  What would be considered kind of a "Standard" Mash bill?  Also, this needs to be an "all Missouri" mash, so, at least for now, this leaves out malted barely. I'm thinking 75% corn, 15% wheat, 10% rye. Will obviously need enzymes. Could just go 75% corn 25% wheat ..read more

I wanted to let everyone know we have new 53-gallon American oak whiskey barrels available.  These are high-end barrels made with "wine grade" staves.  Air dried 24 to 36 months and never see a kiln.  The staves are wider and thicker than standard staves and are fully sanded.  We also have French, Spanish and Hungarian oak barrels available.
