When did you all start cooking with your kiddos? This is the first recipe we’ve somewhat co-created with our then six year old. For Christmas he asked for a mini-waffle maker… anything that empowers our kiddos to love food (opposed to being afraid given their allergies) I say yes to… dairy, egg and nut-free these cinnamon waffles are a new staple in our home. “Can I have your cupcakes instead,” asked me BFF at her son’s bday party. Like many allergy moms, I travel with cupcakes, cookies and snacks to parties. Yesterday, I didn’t feel like making traditional cupcakes, so transformed our banana bread recipe into this dreamy treat. Topped it off with some vegan cream cheese frosting and a sprinkle of cocoa powder, for a little extra flair as well. “Eat Your Veggies!” proclaims the T-shirt Adam got me for Christmas two years ago. And, while I bake A LOT, I stand by that statement. Veggies are my jam and I desperately try to make them our kids’ jam too. Rhea loves them while Emerson takes some work. I dreamt up this magical meatballs recipe simply to hide the veggies, but was blown away by the sweet and savory taste. Perfect over any type of pasta, we top them with Rao’s Sensitive Marinara Sauce (yay, no garlic!). I hope you like them as much as well do!

We pride ourselves on creating recipes that are free from many of the top allergens, but also ones that feature ingredients that most families have on-hand. So many of the crepe recipes we’ve tried ask for ingredients I would never have in our pantry – like safflower oil or flaxseeds – so we developed our own with simple ingredients.
What was supposed to be an early Friday breakfast turned into a lunch as I spent all morning perfecting this recipe with my little taste testers – Emerson and Rhea – who were so wonderfully patient as we mastered this treat.

We do the majority of our recipe testing, baking and photographing on the weekends. And as a result, I tend to multi-task.
