Paneer and pasta, what could be better? Add tandoori spices for a delicious tandoori sauce pasta that comes together easily but still takes care to use tandoori cooking methods and let the spices really stick to the paneer and veggies. With a couple substitutes this can even be a vegan pasta.

This recipe is so easy I almost did not post the recipe. I make so often thought that i thought why not just put up a recipe. This combination of ingredients, particularly the olive oil is a bit unique. If you have not had olive oil or truffle oil with with eggs you are missing out. I first had olive oil on eggs in Italy at the breakfast buffet. They may have just been making it for the American tourists but either way it was good. The side dish that works with so many cuisines. This Instant Pot Turmeric Quinoa works well with Indian food, for falafal night or with a sheet pan of roasted veggies. It is a twist on just cooking plain rice or quinoa on the side of a main dish. The turmeric and other spices add a bit more flavor to complete your meals.
Notes on the ingredients:

Most of these quinoa recipes, while being healthy and tasty are also great for weeknight. None of them require special ingredients or are easily substituted. Also the use of canned chickpeas and lentils in a couple recipes makes them good pantry recipes so you probably have most of the ingredients on hand already. Quinoa has become so popular and with good reason. It is a great alternative to rice but with more protein which is important for vegetarians and vegans.
