Beetroot&Green bell pepper &Carrot Fry
Ingredients ( 4 people)
1 Green bell pepper, carrot, medium-sized beetroot ( cut into small pieces and wash it)
I added masoor dal(optional).
1 small onion roughly chopped
2 or 3 peeled garlic cloves and green chilies minced
1/4 teaspoon turmeric powder
1 or 1 1/2 tbsp grated coconut
2 tablespoons oil
1 small cup of water/enough water

Ingredients
Long Beans (4 servings)
1 medium size onion
5 garlic cloves/ to taste
3 green chillies/to taste
1 tablespoon moong dal
salt 1 1/2 teaspoons/to taste
preparation
Rinse chopped beans and moon dal and drain.
Heat a pan and add 2 tablespoons of oil.
Add 1 teaspoon of mustard seeds, cumin seeds, channa dal, urad dal and 1/2 teaspoon fennel seeds(optional),a pinch of asafoetida. Fry until channa dal & urad dal become a light brown color.

Amarnath leaves -420g(3 servings)
1 or 2 medium-size tomato
3 green chilies/to taste
1 medium-size onion/ 10 shallots
5-7 garlic cloves
1/2 tsp turmeric powder
a little bit of tamarind
1 1/2 tsp salt/to taste
Preparation
Take leaves only out of the stem.
Add 1 cup of water in the pan. Add green chilies, onions, tomatoes, garlic.
Cover and cook until 3/4th cooked on medium flame.
Rinse the leaves twice and drain.
Add to the pan. Uncover and cook until 3/4th leaves are cooked on medium flame.

Baby potatoes 10-15 (boil in the pan until cooked and peel )
1 medium tomato
1 medium onion sliced lengthwise
sliced/pounded garlic peeled cloves
1 1/2 teaspoon red chili powder
1 teaspoon coriander powder
3 tablespoons oil
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
2 cups rice (I used basmati rice)
1 1/2 teaspoons salt /to taste
Add oil in the pan.

1 large peeled or skin on potato sliced&cut lengthwise as shown in the picture&washed.
1 tablespoon plain/Italian breadcrumbs(optional)

I prepared it in the rice cooker.
3 cups basmati rice/seeraga samba(1.14oz cup size, measured rice, coconut milk, water)
2 tablespoons oil(I used coconut oil)
1 tablespoon ghee
3 medium-size tomatoes roughly chopped
1 big onion or 1 medium size onion sliced lengthwise( I used big onion)
1 handful of mint leaves
2 tablespoons chopped coriander leaves
1 tablespoon ginger&garlic paste
1 tablespoon yogurt
1 teaspoon Kashmiri red chili powder(we can use either green chilies or red chili powder according to our taste).

Ingredients
1/2 cup urad dal
1/2 cup channa dal
6-10 red chilies
1 teaspoon salt/enough salt
A pinch of asafoetida
Preparations
In a frying pan, combine urad dal, channa dal, red chilies.
Fry until light brown. Keep stirring continuously.
Transfer to a plate and allow it to cool for 10-15 minutes.
Grind in a coffee blender/blender until to a fine powder/coarse.
Transfer to a plate. Add salt and asafoetida and mix well.
Transfer to an air-tight container.
It is generally mixed with gingelly oil or ghee. Serve with Idly or dosa.
