The Best Vegan Spinach Artichoke Dip

I used to love going to Mimi’s with my mom years ago. When I became vegetarian, it suddenly became quite the struggle to find anything to eat there, and when I went vegan, my options became a drink and dry bread. And come to think of it, I don’t even know if the bread was actually vegan as I was a young, innocent vegan at that time, unaware of all of the nasty hiding places for animal products. Fairly quickly, Mimi’s stopped being our favorite spot to go (and Veggie Grill took its place), but there are a few foods I still miss from Mimi’s. I loved their French Onion Soup (the first recipe I c ..read more

Bright and Tangy Vegan Orange Tofu

Okay, so sauce making is one of my favorite hobbies (yes, it’s definitely a hobby). Throwing a bunch of random stuff into a bowl and realizing that you’ve created an amazing sauce is my favorite feeling. I’m planning to eventually make a cookbook (exciting!) and I’m trying to figure out how many sauce recipes I can get away with adding before it just becomes a recipe book for vegan sauces (which actually sounds amazing). Anyway, this sauce is one of my “randomly throwing stuff in a bowl until it tastes like pure love” sauces. Poured over a bed of crispy tofu, this orange sauce makes for a quic ..read more

Easy and Delicious Vegan Coleslaw
The Freewheeling Vegan

Who doesn’t love a super easy recipe? With less than ten ingredients and only ten minutes to complete, this recipe is the epitome of easy! It’s the perfect recipe to have the kids put together while the vegan meats sit on the BBQ (technically, summer lasts for one more day, so get out there and have a quick, “goodbye summer, hello fall” BBQ!). Coleslaw might just be one of my favorite side dishes. Macaroni salad and potato salad are awesome, but the versatility of coleslaw just can’t be met. Any side dish that can be piled high on whatever entrée you’re serving is an immediate win in my eyes ..read more

Vegan Cinnamon Apple Waffles

It’s cinnamon apple season! Finally! Not that this is changing anything for me. I eat cinnamon apple-themed foods once a week throughout the year, even if it’s pushing 90 degrees outside. No level of heat can come between me and my beloved cinnamon apples. I’ve said it before and I will say it again, cinnamon is the single best spice ever. It’s so warm and comforting, and it pairs so well with a wide variety of fruits and different dishes. You will be seeing it in most of my posts for the next six months, and I’m not sorry for that. Paired with apples and the fluffy comforts of homemade waffle ..read more

Totally Addictive Spicy Garlic Edamame
The Freewheeling Vegan

In season 5 episode 9 of my favorite show, Parks and Recreation, Andy Dwyer delivers one of his best lines: “I’m allergic to sushi. Every time I eat more than 80 pieces, I throw up.” This line, other than being pure comedic gold, perfectly covers my relationship with edamame. I love edamame and I have definitely tested the limits of safe human edamame consumption in the past. I once filled a sandwich baggie with shelled edamame and soy sauce and ate the whole thing for lunch. I couldn’t help thinking about Andy’s sushi dilemma as I sat there after lunch, teeth feeling gritty and strange, my st ..read more

Juicy Vegan Seitan Fried Chicken
The Freewheeling Vegan

I’m going to be totally honest: I kind of hate frying things. That’s not to say that I dislike fried foods, but the whole process of dropping anything into a vat of bubbling oil isn’t my favorite part of eating them. I have yet to buy an air fryer (though I have been wanting one), so for the time being, oil frying is my only option if I want to eat amazingly juicy, flavorful fried vegan chicken (which I do, I really do). This fried chicken can be served in a multitude of different ways! On its own with a nice cool coleslaw, with marinara sauce and vegan mozzarella, in a sandwich smothered with ..read more

Rich Vegan Coffee Crumb Cake
The Freewheeling Vegan

Anything with crumbs is a win for me! The first time I had a crumb topping was when my mother was experimenting with her apple pie recipe (you’ll have to wait for fall for that one) and she used crumbs instead of pie crust. I felt like I had been cheated! Who would choose to put anything other than crumbs on a baked good? Years and years later, here we are. If I can smother something in a buttery, cinnamon-y (that’s totally a word) crumb topping, I will! I was a bit conservative with the amount of crumbs that I added to this vegan coffee crumb cake (though you’d never guess that from thos ..read more
