RADISH AND ORANGE SALAD INGREDIENTS 4 red radishes, cut into thin discs 2 oranges, sliced or cut into small wedges Fresh juice from an orange 4 cups of fresh spinach 1 Tbsp. of olive oil Fresh or dried thyme leaves 1/4 tsp. of salt Black pepper to taste DIRECTIONS Wash the radishes and cut them into thin discs. Set aside. Peel the oranges and cut into slices. You can also cut into wedges. Toss the spinach with radishes, orange slices, olive oil, fresh orange juice, thyme, salt and pepper. Serve and enjoy! CILANTRO LIME CHICKPEA SALAD INGREDIENTS (15oz.) can chickpeas, rinsed & drained (15oz.) can spinach, rinsed & drained 1/4 sweet onion, finely chopped Juice from 1.5 limes 3/4 cup fresh cilantro 4 cups pasta, cooked 1/2 tsp sugar 2 tsp. Dijon mustard 1 clove garlic 1 tsp. olive oil 1/2 tsp. ground cumin 1/2 tsp. salt DIRECTIONS In a food processor, add the spinach and pulse a few times until chopped very small. CARROT AND GINGER SOUP INGREDIENTS 4 large carrots peeled and chopped 3 cups low-sodium vegetable broth 1 small onion, diced 2 tsp. ginger, minced or grated 1 Tbsp. olive oil or vegetable oil 1 1/2 tsps. garlic, minced 1/4 tsp. nutmeg 1/3 cup low-fat milk DIRECTIONS Peel and chop carrots. Set aside. Dice onion, mince ginger and garlic. Heat oil and cook onion by itself for 5 minutes. Add garlic and ginger. Cook for another 2 minutes. Add carrots and cook for 2 minutes. Dijon mustard 1/8 tsp. kosher salt 1/8 tsp. black pepper Pinch granulated sugar 5 Tbsps. olive oil 2 Tbsps. chopped green onions 1/4 cup chopped parsley or 1 Tbsp. dried parsley DIRECTIONS Cook cubed potatoes in a large pot covered by 2 inches of water.
