Today we planted a Gravenstien Apple Tree in our yard in honor of Sawdust Romeo, world’s best Black Lab. He passed in September of 2020. You can read my original post about that here, if you want to ugly cry.
Today brought the opportunity to remember him after a few seasons without him. A beautiful Pacific Northwest Saturday with mixed sun and clouds. Wolfie, Pixie, Mike and I shared the experience, along with memories about his storied dog life. And what a life it was.

Ingredients
8 cups water , divided
2 eggs 2 egg yolks
4 cloves garlic , minced
1/3 cup finely grated pecorino Romano cheese
1/3 cup finely grated parmesan cheese , plus more for serving
8 – 10 slices pancetta or bacon , cut into 1/2-inch pieces 1/4 inch thick
1 lb linguine or spaghetti
1 tsp each salt and pepper
Chopped fresh parsley , for garnish
Instructions
Saute pancetta or bacon in a large skillet over medium heat until the edges are crispy. Remove and set it aside. Along with all but about a tablespoon of the fat. Discard the remaining fat.

Ingredients
8 oz pasta (I like spaghetti or fusilli for this recipe)
1/2 cup butter
1/2 cup mazithra cheese (more if you want, but it is a big flavor so start there), shredded
Instructions
Prepare pasta per package instructions for Al dente, in salted water.
Meanwhile, brown the butter in a sauce pan, watching for a light brown color and bubbling. Be careful not to burn the butter.
Drain but do not rinse the pasta.
Pour butter over the pasta and stir to coat.
Sprinkle the mazithra cheese over the pasta and toss to coat.

Ingredients
1/2 cup chili sauce
1/2 cup ketchup
1 tablespoon Worcestershire sauce
1 tablespoon prepared horseradish
8 drops Tabasco sauce
1/2 teaspoon dry mustard
1 dash paprika
1/2 teaspoon salt
1 teaspoon fresh ground black pepper
Instructions
Combine all ingredients in a bowl or jar.
Chill before serving.

Ingredients
2 tablespoons butter
1 teaspoon salt
3 1/2 cups milk
1 1/4 cups quick cooking grits
8 ounces cheddar cheese, shredded
1 teaspoon hot sauce
1 tablespoon minced garlic
1/4 teaspoon pepper
5 eggs
Instructions
Preheat oven to 375. Grease 9 x 11 casserole dish or Dutch oven.
In 3-quart saucepan over medium-high heat, heat butter, salt, 1 1/2 cups milk, and 2 cups water to boiling.
Gradually stir in grits, stirring constantly with a whisk to prevent lumps.
Reduce heat to low; cover and cook 5 minutes, stirring occasionally. Note: the grits will be very stiff at this stage.

Everyone makes Colorado Pork Green Chili their own way. I actually do mine differently every time because I am comfortable winging it. For me, this basic delicious version is the way to go for smothering everything from burritos to huevos to rice dishes or anything else you like saucy.
