It has been SO long since I’ve posted on my blog. 9 months to be exact!! It’s been exactly one year since COVID-19 rudely inserted itself into my life and changed many things for me in the last year and moving forward. Friday, March 13, 2020 was an infamous day for me personally… a day that I will never forget. I was working as Special Events Manager at The LINE Hotel in downtown Austin. I think we all took a deep sigh of relief after hearing the final verdict of the Derek Chauvin Trial against the murder of George Floyd. What started as a minor tenderness on my scalp turned into a full blown experience with the shingles virus. It was a little over a week ago when I woke up with my scalp feeling sore and tender. I can’t tell you the last time I indulged in spaghetti and meatballs… until last night. This recipe takes a little bit of effort but man, are the results so worth it.
